Cascade Bailey’s Quadratic Formula is a special beer we devised with the gracious masterminds behind Cascade Brewery. They allowed us to visit their new barrel house over in SE Portland not once, not twice, but three times to concoct this master blend. One part Spiced Quad aged in Maker’s Mark, one part Burbonic Plague aged in Heaven Hills, two parts Big Red (a Flanders style sour) aged in Maker’s Mark, and one part from a mystery barrel we’re not allowed to tell you about. Five parts, four barrels, and one convoluted math analogy later and you’ve got yourself one of the most exciting combinations of flavors our taste buds have ever encountered.

On tap at Bailey’s Taproom Third Anniversary Barrel Aged Fest. Pours out a mahogany brown topped with a small head. Aroma was lots of funk, yeast, spice, and bourbon. Taste was more of the aroma with a good amount of bourbon, sour pucker, and fruit. A fun tasty treat from the folks at Cascade.

Had this on tap at the 3rd anniversary of Bailey’s Taproom in Portland, OR. Colour... ruddy brown with no head. Nose... acetic and fruity with hints of Bourbon. Palate... spritely! Tart zip on the tongue with a quick shot of dried tropical fruits, yeast and Bourbon. Fades quickly at the back of my palate. Shame! Wanted the experience to last longer.

Draught at Bailey’s third anniversary party. Hazy brown with a small head. The aroma is funky and woody with some bourbon, spicy cinnamon, leather, and burnt caramel. The flavor is malty and spicy with some bourbon and a nice lactic acidity to clean everything off the tongue. Full but not heavy on the palate. Higher carbonation helps. A very interesting blend of Cacade sours. I see the Bourbonic influence, but the lighter and spicier beers in the blend give it a nice complexity.
