Ruby brown with an off-white head. Aroma is bourbon, earthy mushrooms, vanilla, sour cherry, dates, funk, figs. Full bodied, delicious tartness on the palate with a huge supporting sweetness, slight roughness in the back of the throat. Taste is fig, balsamic reduction, dates, bourbon, red wine. Wow.

2011 bottle. Pours a very dark dark brown color with creamy head that dissipates quick. Has a very strange aroma. A big blend of smooth spices. Kind of reminds me of a Christmas time dessert. Then the smell brings a weird tart pool water note. Not necessarily bad but very interesting. A very interesting beer all around. The taste brings a creamy spice with a tart background that finishes sour and lingers on. A very nice taste is left on the lips that keeps the taste going. A spicy carbonation in the back feel. With a dry finish. A very unique beer. Starts to get a little boozy as it really warms. Nothing too strong. Iím a fan.

Sampled at DLD 2014. It poured a dark brown color with a tan head. The aroma was of tart dark fruit and some funk. The taste was of chocolate, tart dark fruit notes, some roasted malts and vanilla. There was also some bourbon and oak in the backend. Very tasty.

2011 project straight from my basement shelf. pours deep plum amber, minimal head. solid bourbon nose, some dates. taste is very comlex, bourbon, figs, undertones of sweetness battle with tart. medium body. glad I have another bottle.

Pour from bottle at What the Funk!? 2014. Appearance is murky brown with a small cream colored head and decent lacing. Caramelly, toffee, slightly tannic, light oxidation, bready, green apple, brown sugar, tangy, and red grapey aroma. Taste is red wine vinegar, tannins, pears, toffee, bourbon, light roast, and brown sugar with a big sour finish. Slick mouthfeel with medium carbonation. Way too acidic and sour for my liking.

Bottle 2011 Project: Thanks, Doug! Deep, deep mahogany & ruby-tinted body, topped with a slightly creamy, khaki layer of foam on top. Aroma is full of bourbon & barrel vanillin. Tannic, spicy oak with underlying notes of black cherry juice, tangy dark currants, & dates. A hint of roast with apparent bacteria induced sourness. Huge wave of dates, currants, & generic dark fruit on the palate; very deep, sweet, & cascaded with a large whiskey overlay. Big barrel presence; spicy oak, tannins, bourbon, & a large vanilla aspect. Warm, making my stomach fuzzy. Light black cherry skin tartness mid-palate; even though this is a sour ale, the sourness is tertiary to the sweetness & the booze. Canít blame them at 12% ABV. I donít typically love boozy "sour/wild" ales but this was pretty well done. Not my favorite Cascade, but an interesting "slow supper sour" hybrid.

Wow this is 12% and it goes down way too easy. Roasty cherry leather vanilla and balsamic. The typical lactic tartness of a cascade with a marachino cherry, and woody tannic tartness that i dig.

Aroma has a light acidity with a moderate dark fruit character with notes of cherries, berries, plums and prunes. Medium light oak note. Some residual notes from the malt, mostly toasted bread, toffee and caramel.
Pours a cloudy brown with a thin tan head that quickly recedes to the edges where it disappears. No lacing and sheets of alcohol.
Flavor is fairly tart with a moderate fruit presence of cherry, berry, prune and raisin. Some residual malt notes of chocolate, caramel and toffee. Medium oak notes and low bitterness. Moderate spice note that works well with the beer - cloves, allspice and other fall spices. Light alcohol spice in the finish that is hidden by the acidity and spices. Some sweetness upfront.
Mouthfeel is medium full bodied with medium carbonation. Low to medium low astringency and medium alcohol warmth.
Overall an alright beer with a clear sourness. The spices work well with the beer, but I think I might enjoy it more without the spices. As I have said in other reviews, I am not a big fan of dark sour beers (though I seem to continue to buy them). Interesting, but not one of my favorites.

Amazing sour Porter with wood and fruit flavors. Similar to Russian River Consecration which is also amazing.

I was lusting after this beer for a while. Being a microbiologist I simply had to have this beer, clearly named after the bubonic plague, caused by the bacterium Yersinia pestis. One of the most complex Cascade sours I have tasted so far. Brown pour with a tan head. Slight bourbon nose and lots of sour notes (acetic and lactic). Some sweet malt moves quickly to very sour, fading into a nice sour bourbon finish. Well done, Cascade!
