This NW style sour is the uber brother of Pater, barrel aged with 175 lbs of Bing cherries in 15-year-old Heaven Hill Bourbon barrels for 13 months, then aged in Pinot barrels for 13 more months. Fresh cherries were added just before serving for balance. Aromas of dark cherries and wine are noticed up front. Dark cherries, oak, leather and Bourbon on the palate are followed by tart notes of tart cherries and dried fruit on the palate. The finish is of dried cherries, leather and oak. Warning, Dieter will take you for a ride; you may hear techno music in the morning. Auf Wiedersehen!

[2/27/15] Draught at Cascade Brewing Barrel House in Portland. Very dark red color. Lovely aroma with lots of cherries, oak and red wine. Sourish lactic flavor with mild sweetness, lots of juicy cherries, oak and some wine. Medium-bodied.

Absolutely no head on that one. Ripe cherries and little bit of remover in the nose, not agressing at all though. Attack by the tartric acidity but the fruit quickly takes it place in the mouth. Cherry, little bit of wood, berries. It finishes just before a little woody bitterness would like to start.

Poured from the tap. Dark red wine colour, no head. Cherry, plum, and alcohol aroma. Cherry wine flavour. Medium body and texture.

Live from the barrel at Cascade Barrel House. Color is of a red wine of port. No head whatsoever. Aroma is tart cherries and oak. Taste is tart cherries, red wine, and bourbon. Finishes with a similar finish to red wine.

On cask at the brewery. Pours an intense deep purple color without any head. Aromas of oak and cherries. Tart cherry flavor and a little cold boiled plum flavor. The high alcohol is unnoticeable.
