Manhattan NW, a NW style sour ale that was, until recently, a secret. Itís a blend of Blond Quad aged in Heaven Hill Bourbon barrels on 150 pounds of sour pie cherries for five months before additionally aging on apricot noyaux for three months. Aromas of cherries, Bourbon, sweet candy and hints of spice are noticed up front. Tart cherry skins and Maraschino cherries on the palate lead to a dance of rich cherry notes that are followed by slight Bourbon sweetness. Much like the process to make fission, the steps involved here are greater than the sum of their parts. What isnít a secret? At 11.32% ABV, youíre going to need a designated driver

Bottle at Paul tasting. My first cascade sour cheers Paul! Hazy pink/red pour with a small white head which quickly disappears. Nose has light sugar, touch of vinegar, lemon, moderate funk, toffee biscuit, vanilla and is a little sulfuric. Taste has an absolute bucket load of sugar in it - enough to make your teeth gritty. Big residual sweetness all around while lemon morange, lemon tart, and candy sugar come out to play. Booze is hidden masterfully. Solid but a bit too sweet and sugar forward for a sour

75cl bottle at the Kernel, Paul tasting. Thanks to Paul for this one. Pours a hazy pink with minimal head. Aromas are strong with big funky berries, tart pie cherries, peppery, fruity, mild alcohol, light barrel. Flavors are tart and cleanly acidic, pie cherry, medium acidity. A bit zesty in the finish. Very good albeit a tad sweet.

Bottle. Very nice looking opaque yellow copper beer. Aroma is most excellent: sweet concentrated fruits, some spices, strawberry, caramel. Taste is well-rounded and complex, nice soft bitter hop tones. Aftertaste is remarkably different, some pungent sourness and acidity. Most amazingly though, it doesnít taste in the slightest as if it has 11%+

Pour out of bottle at Sourfest 2013, clear reddish pour with thin off white head, aroma brought notes of cherry, slight booze, hints of herbal, grass, slight tart fruit, lemon notes, caramel as well, slightly odd. Taste is big sweet cherry, slight toffee, hints of herbal, spice, and lemony notes, finishing sour, slightly sweet. Something in here just didnít work for me.

2011 Project
Tasted on 10/13/13 from a corked and caged 750mL bottle purchased at the Cascade Barrel House. Pours clear amber/orange with a thick beige head that recedes fairly quickly to no lace whatsoever. The nose is dominated by cherry and oak with some baking spice and a bit of almondy marzipan. The flavor is very sour with the cherries and citrus balanced by some oak, malt, and marzipan sweetness, and an interesting quad-like back end. The body is fairly full with sticky tannin, average, fizzy carbonation, and a very long cherry, oak, lightly spiced finish with the higher alcohol starting to show through a bit.

Bottle: The aroma consists of citrus, orange peel, light lemon, fruit, faint vanilla, and a hint of oak. It pours a slightly hazy dark orange with a small white head that quickly fades to a thin film. The starts with moderate citrus, light cherry, and a touch of cola. The finish has moderate lemon, faint apple, vanilla/bourbon, and oak. Itís medium bodied with mild carbonation. Overall, way too drinkable for 11.3%.

UPDATED: APR 8, 2014 Bottle: Thanks, Kevin! Deep copper body, translucency near the edges. The head is like that of Sprite... Foamy white, loud, and gone in a few seconds. Aroma is lightly sweet cherry, very faint but smooth bourbon, some musty oak, grapes, and some mild grains. Lightly sour. Taste is a melody of mild cherry notes with a very small bourbon inclusion; smooth and barely noticeable. Tart up front, coming in with light sweetness and a faint vanilla and oaky burst. Sour but not quite puckering, with light acidity that tickles the mouth. Warming, dry oak and sailing tart cherry finish. Hard to detect the 11.3% ABV. Damn Casacade and their high gravity sours.
