Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Angelmonster (159) - Colorado, USA - NOV 13, 2015
Bottle is dated 3/30/15 Pours almost exactly same color as the label, a yellow orange hue. Body is hazy and bubbly with a 1\4 inch pearl white head. Head retention was average and lacing was great. Aromas are of classic saison, peppery yeast, witch hazel/clove, and some lemongrass. Pale straw malts are faint with light bitter, citrus hop notes. Not much alcohol at 5.5% First taste is sour lemon peel with a good dose of acidity. A little bit of hay/barnyard funk mixed with oak notes from the barrel come through. Sweet malt and wheat counteract the funk and tartness while clove/pepper yeast reminds you you’re drinking a saison. Not much hops or alcohol detected. Mouthfeel is light, crisp, and well carbonated. Body is thin, head dissipated rather quickly unfortunately. Finish was slightly puckering. Overall, was an interesting take on a classic style. Open fermentation and oak aging really set the beer apart.

Yellow pour with a white head. the aroma is full of yeast, lemons, biscuit malt and wheat. The flavor is similar, with some biscuit malt, apples and white pepper really standing out. Medium mouthfeel and medium carbonation. Nice saison.

(750ml bottle) Pours a cloudy pale yellow body with a small white head. Aroma of lemon, herb, grass, and florals. Flavor of lemon, light herbs, lacto, brett, wood, and some vinous with a soft mouthfeel and dry finish.

Fonefan 280215. Golden -yellow colour with a white head. Flavour is citrus, lemon, malt, yeast, brett, orange. Very nice beer.

Bottle in VT, pours a hazy golden orange color with medium head. Notes are wheat, pepper, lemon, oak, and earth. A little bit acidic and off for me.

750ml bottle. Bottled on 3/30/15. Poured a hazy yellow color with a white head. Citrus, funk, wood, some yeast, and some spice. Tart wheat / citrus finish and funky finish.

This blender continues to impress. Aroma is nice citrus, cracker malt, lightly grassy, brett funk, and yogurt. Taste is lactic sour, citrus, vanilla, and mild sweetnes. Great,!

Bottle. Pours a hazy yellow golden color with a small white head. Has a fruity yeasty weak woody bretty aroma. Fruity weak sour tart bretty woody citrus flavor. Has a fruity weak sour tart bretty woody finish.

Hazy yellow pour. Not much of a head. No lacing. Tart aroma of fruit and Brett. Tart taste of the same. Big lacto note. Way more than expected from a Saison. Decent.

750ml bottle thanks to rich. Pours out a hazy straw topped with a white head. Nose is tart funky barrel notes spice bread malt. Taste is more of the barrel notes spice sweetness some fruit notes and a nice end.
