Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottle. Blend 2 ( 6/25/14). Thx for sharing Jack. Pours deep hazy yellow straw with a whispy white head that leaves plenty of sticky lace throughout. Super awesome balanced funky brett lacto light oaky nose. Could smell all day long. Flavor is nice; some Meyer lemon juice, a bit of grapefruit juice, hay like Malt, incredibly dry and super well balanced. This is super awesome beer. Incredibly soft palate considering all the bugs and funk in this one. Very nice blend. Good work, Casey. This is super excellent.

Bottle - Second batch. Hazy golden with a film of white head. Nose is lemon, pineapple, a little tart vinegar. Taste is the same, but much more pungent. Long, tart finish along with some dusty yeast. White grape. Smooth, medium-light with gentle carbonation.

Salmoniform (823) - Sweet Home, Oregon, USA - SEP 26, 2014
Blend #2 from bottle to glass at the de Garde taproom. Hazy golden hue with fizzy white head. Aroma is apricot, straw, white peppercorn, oak. Mouthfeel is fantastic with medium light body and crisp carbonation. Taste is dry sweetness followed by a great tartness and a clean finish. Overall this is a REALLY nice blend!

blend #3 (will update notes when I try my #1 blend downstairs) Hazy orange gold. Smells like peach and cheese and a tart Berliner. Tart, effervescent. Lots of lime juice. has a standard 2014 saison taste, tart, bright with a nice mouthfeel. Looking forward to trying more of their beers.

Bottle thanks to the one and only Nielsen ! Pours a slightly hazy yellow golden color with a finger of white foam. The nose is bright with tart lime notes, musty oak, lemon zest and a bit of unripe pineapple and wet stone. The palate follows nicely and is very balanced. Nice play between rustic grain, wet grass, barnyard funk, lemon, hints of toasted vanilla linger with the dry tart finish. Pretty delicious !

Bottle @ Doodler. Light milky yellow appearance with a white head. The aroma has some funk with a lot of corn, grass, and hay. Tart and lemony flavor. Vanilla, soft oak, pineapple. Twangy finish. Pretty grassy and juicy. Nice.

Forgetfu Tasting at ChrisOs. Thanks to Forgetfu Bill. Very hazy gold beer, small white head. Palate is light, dry and a little crisp. Mild sourness, dry seltzer and little white wine tang (but apparently red wine barrels). Finishes dry and crisp with a touch of banana ester. Okay.

Beaver (1309) - Fort Collins, Colorado, USA - JUL 29, 2014
750 ml bottle, bottled 5/30/14. Pours hazy light yellow with a small creamy white head that goes to a thin film and laces the glass.

The aroma is banana and musty earthy yeast with a little lactic fruit.

The flavor is some tart/lactic and sweet fruitiness (lemon) with a little funk and a dry finish. The mouthfeel is medium bodied with spritzy carbonation.

Overall, interesting tart saison - it tastes kind of like a berliner weisse.

Bottle at home. Pour is hazy honeycomb with a lastin white head and great lacing. Big funky, oaky, citrusy, doughy, grassy, oats, and herbs in the aroma. Taste is tart lemons, gym socks, nice oak, biscuit, honey, floral hoppy, light spice and a touch of brett with a medium tart, lactic finish. Full mouthfeel with medium carbonation. Very nice rustic style saison. Has quite a bit of lactic tartness going on right now, but I’m excited to see if the brett takes over and dries it out even more.
