COMMERCIAL DESCRIPTION
Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottle split in London, 10/07/14. Murky pale yellow with a moderate off white swirl/edgeing. Nose is bitter citric peel, straw, woody notes, bitter orange, herbal effect, creamy vanilla, tarte white grape. Taste comprises farmy, lemon rind, grassy, vanilla custard. Medium bodied, fine carbonation, semi drying close with a lactic tang. Respectable enough saison.

750 ml corked and caged bottle poured a hazy gold with a small lingering white head. Aromas of straw, yeast, fruitiness and light oak. Palate was light bodied and crisp with a dry tart finish. Flavors of bread, yeast, citrus and light oak with a crisp dry tart finish.

Bottle @ home. 3/30/15 release. Slightly hazy, golden orange appearance with a thin white head. I still get a chalky / corny / herbal note in the nose. Maybe a little more funky. Lemon and a hint of spice. Light body. Tons of lemon and citrus soda. Fairly herbal. Lightly tart. Lots of lemon in the after taste. This certainly seems to be better than I remember the earlier releases being but maybe my preferences have evolved as well. (4.0)

(August 2014 rating) Bottle @ Doodler. Light milky yellow appearance with a white head. The aroma has some funk with a lot of corn, grass, and hay. Tart and lemony flavor. Vanilla, soft oak, pineapple. Twangy finish. Pretty grassy and juicy. Nice. (3.7)

thanks to Cliff! Great aroma, lacto and pedio, brett and light cracker biscuit malts all over the aroma and flavor. I get some lambic gunpowder and basement in there. Finish is lacto. Awesome!

750 ml corked and caged, bottled 3/30/15 and poured into a tulip. Purchased at Mile High Wine & Spirits. Cloudy orange appearance with a small, lingering white head and patchy lacing. Aroma of funky yeast, sour notes, oak, citrus, tropical fruits, earth, barnyard and wheat. Similar flavor, juicy and mildly sour with light funk, white wine and wood. Medium body with a light puckering feel and a refreshing tart finish, a touch dry. Overall, an incredible sour saison, very quaffable and quenching. Yowza, fan fucking tastic. Strong funk and sour in this, borders on tasting like a gueze but very crisp and refreshing. All day drinker for sure.

Bomber shared by Armin. Hazy light golden pour. Funky lemon zest aroma. Taste is more tart than expected but I like it alot. Another amazing beer from these guys!

Bottle shared by Armin, thanks! Pours a cloudy light yellow with a slight peach hue and a white head that dissipates to the edges slowly. Aroma has notes of light peach, funk with a light grain backbone and a hint of light fruit. Flavor has a nice tartness with peach, light fruit, light grain and an underlying yogurt note.
