Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottle split in London, 10/07/14. Murky pale yellow with a moderate off white swirl/edgeing. Nose is bitter citric peel, straw, woody notes, bitter orange, herbal effect, creamy vanilla, tarte white grape. Taste comprises farmy, lemon rind, grassy, vanilla custard. Medium bodied, fine carbonation, semi drying close with a lactic tang. Respectable enough saison.

Pours hazy unclear lemon straw with a nice white head. Aroma is sweet and tart and apples and juicy grapes nice in the nose. Flavor brings a glances subtle tartness with wheat like malty notes they settle easily but quickly on the tongue.

Batch #1. Amazingly clear glowing gold, not what I was expecting. Nose is light lemon zest, light funk, light wheat...kind of light everything. Very clean finishing with light lemon tartness and limestone minerality. Fairly simple like others have said, but well done. Looking forward to later batches as I hear they are a bit more developed.

Bottle shared at a chriso tasting in London - big thanks to Bill. Pours hazy yellow with a frothy, pure white head. Pleasant funky tart lemon aroma. Light sweet flavor with good bitter straw, mandarin orange, lemon, general citrus rind. Light bodied with average carbonation. Tangy finish with moderate funk, decent dryness, more lemon rind, sand, slight acidity, straw. Nice saison.

Thanks wchesser for the intro to this brewery. Not overly complex, but a wonderfully tart lemon, hay, and some white pepper. Buddy said it reminded him of a berliner hybrid. LIght, tart, lively palate, refreshing. Could drink quite a bit of this.

B1 bottle thanks to Bruce. Pours a cloudy yellow with frothy white head that lasts. The aroma is strong funk, yeast, citrus. Thin mouth with nice tart citrus, juicy, light funk, very impressive.

Bottle from unknown. Second blend, 06/25/14. Pours a cloudy pale orange, little bit of head. Nose citrus, some sulphur, body very dry, lots of yeast in finish, maybe a bit much? Good, but slightly below exceptional.

Hazed gold pour, fluffy white head. This is a saison that lends itself to more of a sour than a funky, earthy, yeasty Belgian style saison. Nice lemony sourness, hints of plain yogurt, some light barnyard flavors dancing around. Very, very tasty.

Bottle pour. Hazy yellow with a white head of foam. Aroma is lemon, grain, bread, a little funk. Taste is a touch tart and yeasty. Medium body and medium carbonation. Nice funky saison.

Bottle. Blend 2 ( 6/25/14). Thx for sharing Jack. Pours deep hazy yellow straw with a whispy white head that leaves plenty of sticky lace throughout. Super awesome balanced funky brett lacto light oaky nose. Could smell all day long. Flavor is nice; some Meyer lemon juice, a bit of grapefruit juice, hay like Malt, incredibly dry and super well balanced. This is super awesome beer. Incredibly soft palate considering all the bugs and funk in this one. Very nice blend. Good work, Casey. This is super excellent.
