COMMERCIAL DESCRIPTION
Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottle split in London, 10/07/14. Murky pale yellow with a moderate off white swirl/edgeing. Nose is bitter citric peel, straw, woody notes, bitter orange, herbal effect, creamy vanilla, tarte white grape. Taste comprises farmy, lemon rind, grassy, vanilla custard. Medium bodied, fine carbonation, semi drying close with a lactic tang. Respectable enough saison.

Bottle, 75cl. An unclear, pale yellow colored beer with a small, white head that lasts. The aroma is very funky and citrusy, with orange, lemon, some barnyard, pale malts and a faint peppery touch. It’s medium bodied and very dry, with a nice carbonation level. The flavor has a fine bitterness, orange peel, lemon juice, some peppery yeasty notes, pale malts and a barnyard touch. Lasting finish. It’s lacking a bit on freshness compared to how I’d like my saisons, but it’s a fine brew anyway. 150228

Bottle at Carnival Tasting in Ulfborg 2015-02-28. Hazy pale golden/yellow beer with a nice white head. Perfume aroma, grassy, lemongrass, yeasty, spicy notes, woody notes, brett, some oak. Brett flavor, citrus, grapefruit, perfume notes, grapes, tart notes, grapefruit, oak, some lemongrass. Really well balanced, I like this alot.

Fruchtiger, deutlich säuerlicher Antrunk. Dabei bleibt die Säure im Vordergrund, spritzig, natürlich. Dahinter wenig hefig, harmonisch, mittellanger, seicht ausgleitender Nachgeschmack. 10/12/12/12/11/12

Bottled 1/7/15. Mix of funky and tart sour aroma with citrusy lemon and some banana yeasty aromas. Taste is lemon citrus, funky sour and slight lactic tartness in the finish. More funky than sour. Light carbonation but doesn’t taste flat. A slightly watery palate, but complex and flavorful. Bitter funky dry finish. Descent and refreshing, but doesn’t blow me away. For $17 a bottle it should be great, but it is average ish. Am getting a bit of a tropical, almost passion fruit flavor the more I drink, which is subtle but nice. Some woody flavors as it warms. Bumped up my rating as I went through the bottle. Look forward to try more from Casey. I like what they are doing. ---Rated via Beer Buddy for iPhone

Second blend. Pour is pale golden yellow with a bubbly white head that dissipates quickly. Nose is a bit heavy sulfur, moderate peppery spice, hint of lemon rind. Sulfur dominates too strongly. Taste follows suite, heavily sulfuric, a bit of mineral, moderate sweet lemon. Light body, soft carbonation, nice body. A bit simple and heavily sulfuric, lacks any real saison yeast quality.
