Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottle split in London, 10/07/14. Murky pale yellow with a moderate off white swirl/edgeing. Nose is bitter citric peel, straw, woody notes, bitter orange, herbal effect, creamy vanilla, tarte white grape. Taste comprises farmy, lemon rind, grassy, vanilla custard. Medium bodied, fine carbonation, semi drying close with a lactic tang. Respectable enough saison.

(750ml bottle) Pours a cloudy pale yellow body with a small white head. Aroma of lemon, herb, grass, and florals. Flavor of lemon, light herbs, lacto, brett, wood, and some vinous with a soft mouthfeel and dry finish.

Fonefan 280215. Golden -yellow colour with a white head. Flavour is citrus, lemon, malt, yeast, brett, orange. Very nice beer.

Bottle in VT, pours a hazy golden orange color with medium head. Notes are wheat, pepper, lemon, oak, and earth. A little bit acidic and off for me.

750ml bottle. Bottled on 3/30/15. Poured a hazy yellow color with a white head. Citrus, funk, wood, some yeast, and some spice. Tart wheat / citrus finish and funky finish.

This blender continues to impress. Aroma is nice citrus, cracker malt, lightly grassy, brett funk, and yogurt. Taste is lactic sour, citrus, vanilla, and mild sweetnes. Great,!

750ml bottle thanks to rich. Pours out a hazy straw topped with a white head. Nose is tart funky barrel notes spice bread malt. Taste is more of the barrel notes spice sweetness some fruit notes and a nice end.

Excellent saison here. Pours hazy golden with a small white head. The aroma has spice, peach, farmhouse yeast, oak, mild caramel, a touch of bugs and some vanilla. It has a light crisp body with mild sharp carbonation. The flavor starts with saison spiciness, pepper, light brett, bugs, some woody oak and really nice balance to everything. The finish has nice spice and citric acid. Quite well done.

Bière dégustée chez Alexandre Mathieu. Merci man! Bière jaune paille, presque blanche, voilée et moyennement mousseuse. Nez plutôt sauvage de Brettanomyces, de citron et de grains de blé jeunes et légers. Une quantité appréciable de bois fait également partie de la fête. Surette, cette bière au goût de citron évolutif, garde constamment ce goût de pommette vertes tout au long de son parcours. Le citron est d’abord acide pour se révéler petit à petit pétillant et même un peu salé. À cela s’ajoute d’importantes notes céréalières. Aucun arrière-goût, amertume plus que subtile, c’est une bière quasi matinale par une journée chaude d’été.
