650 ml bottle from Monoprix, swingtop. Poured pale gold with a five finger white head. Light dusty aroma, sort of floral. Medium body with lots of fine bubbled carbonation. Flavor is light malt with notes of citrus. Finishes clean and dryish. It’s an excellent light beer. Really thirst quenching and refreshing.

Bottled, 650ml. Hazed gold with light head. After the Cuvee de Noel, this was pretty bland. Herby, flowery hop with a thin malt body, some carbonation and a slight papery note. Not too much to recommend it.

3 AROMA 6/10 APPEARANCE 2/5 TASTE 6/10 PALATE 3/5 OVERALL 13/20 shalloWMeans (169) - Independence, Kentucky, USA - JUL 15, 2008
From the very first round of my very own annual Beer of the Year tournament. Sixteen great beers from around the world, elimination style bracket, good times for all. This was a very interesting beer, but unfortunately could not stand up to the awesome drinkability of the St Sylvestre 3 Monts. When poured, the appearance is definitely cloudy from the yeast. With the beer being organic and unpasteurized, there is certainly plenty of yeast, and it’s a little difficult to retain. Still, the color is nice- lazy golden amber, little to no head. Aroma is very remniscent of sherry; with woodiness, nuts, and tannins; very oaky (Could be a little corked). Nonetheless, it is very complex, and very intriguing. The body is rather light, but not watery, with just a hint of carbonation. The taste is much better- an undeniable nuttiness, again sherry and dry wine notes, with a bit of green apple and apricot crispness, remniscent also of a dry, frech cider. Overall, the bottle conditioning definitely imparts an oaky, winey character, ending with a short, sharp finish. I think this would have had a better chance of winning, but unfortunately the guests were a bit intimidated by the large chunks of yeast in the glass...
