Brewed with elderflower.

Saison Cazeau is a light white beer, refermented in the bottle, with 5% alcohol content. As well as the Pilsen malt and two hops which give it a really nice bitter flavour, Saison is laced with elderflowers (Sambucus Nigra L.) which make it really refreshing. The elderflower only blooms for three weeks between mid-May and mid-June, which means that production of our Saison is very time-limited.

Blonde voilée, effervescence forte, mousse abondante et persistante. A peine les malts se sont-ils installés que les fleurs de sureau et le houblon se mettent dans la place et s’installent dans le palais, donnant à la bière une amertume pour le moins fleurie et légèrement fruitée. Audacieux, même si déconcertant de prime abord.

(Draught at Delirium Hoppy Loft, Brussels, 23 Oct 2013) Hazy yellow colour with frothy, white head. Malty, fruity nose with notes of white bread, peaches and hay. Malty, fruity taste with grass, hay, peaches, grainy malt and a fairly dry finish with a spicy bitterness. Medium body, quite dry. Quite tasty and very well balanced. Very nice and highly drinkable saison.

Bottle 0.33l at moeder lambic Saint-Gilles. Pours hazy yellow, small lacing white head, medium carbonation. Aroma is yeasty, hops, slightly sour. Taste is dry, no sweetness, medium bitter with a slight touch of elderflower. Interesting Saison. Refreshing. Elderflower makes the difference here. Good.

Pale hazy yellow with a bubbly white head. Slightly fruity yeast aroma, some malt, and with herbal and pepper notes. Dry with grainy pilsner malt flavour and a touch of elderflower. The elderflower bush green flavour that dominates the aftertaste is not entirely pleasant

Green glass 750ml. **Aroma - Totally skunked, like strongest I have ever smelled, aroma subsided after a few sips. **Appearance - Light, white, and hazy. **Taste - Skunk aroma sort of overwhelmed everything at first, eventually I got that elderflower and other light citric notes, could be very refreshing on a hot day. **Palate - Super light, for the style I am inclined to say ok on that, like a lemonade beer without the sour. ** Overall - Experience ruined by the skunk, at 5% this is a more traditional old style saison, a farmhand’s mid-summer quaff.

UPDATED: SEP 9, 2013 Bottle conditioned 750ml. Gassy and faintly-hazed golden body with a short white head. Cork, concrete, chemicals, leafy herbs and concentrated lemon oil aroma, the last on growing much, much stronger as it breathes. Medium body. Creamy, low, natural carbonation. Green, dank, floral and citrusy hops and flowers. Almost leans into astringent twig / herb / leaf territory but not quite. Delicious, seemingly full-bodied, lush and rich, superbly hoppy and refreshing and quenching. So smells a bit like elderflower cordials with the strong lemon herbaceousness but also TAR and his cucumber comment seem spot on. This beer seems to shapeshift drink to drink and smell to smell. At first I thought it might be skunked. Then a strong lemon cleaner aroma was there. Then a strong herbaceousness. Then a whiff of chlorine fumes! Thankfully it doesn’t last. A fresh top-off from the bottle and we’re back to lemons and dandelions and fresh hops, but I can’t help but notice a soap / chemical / oil character now and then.

Bottle. Head is initially large, frothy, white, mostly lasting. Body is hazy light to medium yellow. Aroma is lightly malty (toasted grain), lightly to moderately hoppy (herbs, flowers), lightly yeasty (cobwebs), with notes of lemon/lime zest, pepper, crabapple, gum, basil/sage. Flavor is moderately sweet, lightly to moderately acidic, lightly bitter. Finish is lightly sweet, lightly to moderately acidic, moderately bitter. Light to medium body, velvety texture, lively carbonation. Awww, yeah! This is my kind of saison. Super quaffable, low in alcohol, wonderfully tart without being full-on sour, and pretty much impossible to tell it’s spiced (I’ve never smelled elderflowers, but there’s nothing obvious in the nose that screams out that it has any adjuncts at all...it’s floral-herbal, but could easily be mistaken as coming from hops). Very clean tasting, perfectly balanced, and impossible to stop drinking, right to the last drop of the bottle. Fantastic rendition.

TAR (2499) - Lafayette, Colorado, USA - AUG 30, 2013
Best before June, 2014: Yellow with light haze. Thick, persistent white foam adorns the glass with intricate lace. Pungent elderflower predominates the intriguing nose. Underlying dill, dandelion, white pepper, Granny Smith apple, gunpowder, unripe peach, uncured hay. Vague note of crackery pils malt and lemon zest. Subdued tartness gives way to an assortment of fresh herbs and a snug, palate-hugging lemon zest bitterness. Pronounced rose-petal softness and buttery dandelion fuses with fruity peach esters. Starchiness comes in waves via the polished, mouth-filling pils malt which provides a marked richness and combats some of the unyielding dill-tinged bitterness. Medicinal and gunpowdery phenols give enormous vivacity to the spicy peppercorn-esque intensity. Takes on somewhat of a muddled vegetal character after a few gulps, though, and the elderflower potency begins to fatigue the palate. An ensuing buttery dandelion/chamomile dullness does not help. A soapy astringency creeps in, as well. Finishes dry, lemony and bitterly herbaceous with a celery seed character amid lingering gunpowder and fervid white peppercorn. Somewhat of a mixed bag. Love the yeast character as its quite peppery and phenolic and nicely attenuative, but overall this comes across as being unfocused as the elderflower addition has an overpowering effect rather than a complementary one. Aside from the soap and vegetal notes (celery and cucumber), it’s perfectly clean. With that said, I slugged the entire bottle with little effort. Side rant: Bewilderingly enough, this beer went from being packaged in brown bottles to GREEN ones. Why oh why do breweries do this?!?!

bottle, xmas2012 tasting chez baerwaldt. bright golden with just a faint haze and a fluffy white head; curious aroma of dandelion and dusty cellar; plenty of lemon pip flavour and white pepper; finishes surprisingly dry. a good way to start a session

Draught. This is a nice light saison with a great underpinning of elderflower.
