COMMERCIAL DESCRIPTION
Brewed with elderflower.

Saison Cazeau is a light white beer, refermented in the bottle, with 5% alcohol content. As well as the Pilsen malt and two hops which give it a really nice bitter flavour, Saison is laced with elderflowers (Sambucus Nigra L.) which make it really refreshing. The elderflower only blooms for three weeks between mid-May and mid-June, which means that production of our Saison is very time-limited.

Cask at GBBF 2012, London. Pours hazy, yellow-gold with a monstruous, white foam head. Nose of doughy yeast, lemon zest and white bread. Light to medium sweet flavor with doughy malts, odd smoe, some minerals and grains. Light bodied with average, smooth carbonation. Moderately sweet finish with toasty dough and faint, dry yeast. Not bad, kind of average.

Cloudy golden color with a white head. Strong green pepper character to the nose. Mild lemon zest, sweet bread, and a lot of yeast. A fairly strong floral quality and some grass notes. A bit lemony on the palate and fairly grassy as well. Some sweet bread, the same pepper skin, and some floral hops. A light bitterness on the finish.

Beer left me wanting a lot more. Very light not enough yeast or depth to palate, it had some minor grassy notes, but not enough. Went down easy, but without much character.

Bottle from Bottleworks

Pale pour, fluffy head. Light saison spiciness to the aroma, couple with something like honeysuckle (which I suppose is the elderflower). Flavor is gently sweet, honeyed, not the least cloying with this late, late Saaz-like whisp of hop bitterness. Spot on mouthfeel, light and exceptionally drinkable without being watery in the least, intermediate carbonation never pushes too hard. I really like this beer--to think that one could have this instead of your classic American lawnmower beers! Brilliant.

A - Pours a hazy golden yellow with a big finger of frothy white head. The head fades down very slowly leaving behind some nice lacing. S - Aroma is a mix of pilsner and grainy malts with floral notes, Belgian yeast, some coriander and other light spices, and some lemon zest. T - Starts off with a mix of pilsner malts with some tart lemon zest, some coriander, and some floral notes. Through the middle, Belgian yeast flavor come through with some farmhouse flavors, and some more floral notes. The finish is a mix of pilsner malts, tart lemon zest, floral flavors, Belgian yeast, and some spices. M - Medium-minus bodied with heavy carbonation. Feels smooth with a tart and floral finish. D - Very drinkable. Nice floral saison with a good balance of flavors and a nice tart finish.

750, capped. Pours a murky pale amber with a gigantic fluffy white head. Appealing mildly spicy nose. Flabby lightish body with sluggish carb. Not much happening on the mid palate. Starts out pretty promisingly, but gets a little sideways.
