COMMERCIAL DESCRIPTION
Brewed with elderflower.

Saison Cazeau is a light white beer, refermented in the bottle, with 5% alcohol content. As well as the Pilsen malt and two hops which give it a really nice bitter flavour, Saison is laced with elderflowers (Sambucus Nigra L.) which make it really refreshing. The elderflower only blooms for three weeks between mid-May and mid-June, which means that production of our Saison is very time-limited.

Dim golden body with a dense white head. Aroma is fruity and spicy with some yeast. Flavor is fruity, oranges, grapefruit and light sweet malty. The finish has an orange peel bitter impression. Quite light and addictive refreshing.

Bottle. Citrus and sour aromas, lemon seed sour taste foggy light amber. Bready short in the finish. Not very complex beer but would be great on a hot day.

Bomber. Poured a hazy pale straw with a HUGE, pillowy head. Took a long time to pour out two glasses. Head left a lot of skuzzy lacing. Aroma was earthy, yeasty, dry, herbal. Flavor was that plus a bracing hit of bitterness. Quite dry, but there’s also a bit of honey. I don’t get elderberry specifically -- or even much fruitiness. But it adds a nice floral element. Almost like a pilsner, both in terms of malt character and dry spiciness of the hops. Light mouthfeel.

Draft at Monks. Hazy gold pour with an unusually frothy white head for a Saison. Semi-dry citrus floral notes. Orange peels. Thyme. Elderflower. Celery. Birch. Dandelions. Nice.

UPDATED: MAY 3, 2013 75cl bottles - Glad to finally have been able to track 2 bottles down, as the brewer was out and only brews again when the elderflower is in bloom again. So this was a 1-year old saison. - Pours a hazy sunshine-on- a-spring-meadow yellow with a big soapy head that leaves a fine sticky lacing. Clean and crisp, refreshing and the perfect accompaniment to a mountain cheese. Elderflowers and wild honey dominate, modest perfumes rather than bold tastes throughout. Recommended by an organic cheese shop in Arlon. Nice subtle but upfront floral quality to a saison for a change, in lieu of the palate-rinsing Dupont bitter dryness.
