Exit 89 Lager began with the water that we use. Our water comes from the North Anna River on the northern border of Hanover County (site of a major Civil War battle between Grant and Lee – sorry, history dork!). After filtering our water, the water is very soft and has a mineral content similar to some of the great lager-brewing areas of Europe. We use this water to mash in with four different malts. In the boil kettle, several additions of German Tettnang hops create a modest bitterness, just enough to balance with the malt. This beer is all about balance. For fermentation, we went with a great Czech yeast strain that leaves the beer clean and malty. After fermentation, Exit 89 went through a cold conditioning period (lagering) until, after numerous sampling, we felt it was ready. The beer was then filtered (on a beautiful Saturday afternoon) to remove any yeast that had not yet dropped out naturally.

The result is a beautiful and crisp amber lager (Vienna-style if you must absolutely know the category) from COTU.

Draft. Pours amber with a nice white head. Very smooth, flavorful lager. Nice cereal and hop balance. Very easy drinking, inoffensive, ordinary, but in a good way. would love to enjoy a sixer in cans of this in the warm weather.

Tap @ Taphouse. Dark golden with nice head. Smells just like the warm wort off the last beer we brewed. Light cereal rate, a little sweet, a little sour, a little dry. Fairly crisp.

From the tap came a amber brew white head. Floral/fruity aroma. Medium bodied with a malty taste with buttery notes and a hint of raspberry.

Growler fill from COTU. Very nice looking clear reddish amber, nice lasting creamy head. Aroma is basically bread. Flavor matches. No real hop flavor, just a bit of balancing bitterness, but this tended a touch sweet. Not bad. Medium bodied.

Draft at the source. Poured a amber color with a medium sized white head. Aroma was light grassy notes, some citrus character from the hops. Crisp and easy to drink. Largely uneventful otherwise.

Draft at Mekong The lager was a deep amber color with a nice head . The nose detected some roasted malt and breadlike aroma. The lager failed to meet what I have had in other Vienna lagers. The body was medium with average carbonation. The finish was smooth with some sweet malt lingering on the tongue.
