Traditional Gaulish beer, on yeast, unfiltered an unpasteurized, at 6% alc. Produced on malted barley, it is aromatized with seven different plants an a touch of honey, which give this beer an exceptional aroma. Serve this luminous amber beer at between 8 and 12 deg. C, in a wide glass (or a drinking horn) and remember to let yeast fall to the bottom of the bottle. Do not drink more than two or three glasses of Cervoise at a time, and the sky won't fall on your head, in the name of Toutatis!

A nice surprise. Fruity and herbal aroma. Taste is bittersweet, with a complex range from anise to caramel, from herbs to honey. I really appreciated this!

Light tea coloured pour. Aroma of Chamolile with a hint of metal. Taste is complex but the flavours are a wide array of conflicts. sour withchamomile, metal, a very slight bit of mint, caramel, - all too subtle save for the metal. Appreciate the opportunity to try this but i was not a fan. Barely finished my sample and did not go back for a second.

Like a biere de garde, but lighter, and a little sourish. Average mouthfeel. Nothing to lok at. Thanks Doug.

Looks nice with it’s mist copper body and of white head that lasts. A surprising aroma I think, with spicy candy (Dutch Hopjes, or Werther’s), chestnut, leather and vanilla. Quite unusual for a beer, but definitely nice. It doesn’t quite work as good for the taste, unfortunately, which is dry and medicinal. Especially the very finish reveals this. Carbonation is ok, but it’s because of the typical taste that I won’t have many of these. Fun to try though for sure. Should be categorised as spice/herbal/plant. (33cl bottle)

33cl bottle at Hall’s Beer Tavern, Rue St Denis, Paris on 18th November 2011. Pours hazy amber with thick yellow-white foam soon decaying to low level and leaving a patchy lace. Yeast and malt aromas - pungent autumn leaves and herbiness. Liquid has a fair amount of body and is richly malty but not too sweet. Berry fruits and strong aniseed line present. Aniseed and fruit blend with malt in a richly fruity aftertaste. Zingy mouthfeel.

Clear medium amber colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, tassels furniture - antique furniture, oxidide, dark dried fruit, raisin, plum. Flavour is moderate sweet and light bitter with a long duration. Body is medium, texture is oily, carbonation is soft. [20111105]

Bottle from La Grand Epicerie. Nice forest aromas. Nose of herbs, caramel, cola, and honey. Taste is sweet, with bitter balance, and good length. Palate is oily and lively, with medium body. Amber, with a thin head.

Bottle. A murky, unclear orangey brown beer topped by some off-white bubbles. White sugar, fruityness and some spicyness in the aroma, a touch of yeast as well. The same goes for the flavor, it’s quite yeasty, with dried fruits, sugar and some fresh fruits. Medium body, nice carbonation. Some spicyness in the end. Not my choice of beer, it’s too unbalanced, but it’s drinkable and not bad. 111105
