UPDATED: MAR 24, 2008 Clean, rich, bready aroma with wonderful green hops. Dry yeast and molasses. Cinnamon, spices. Awesome complexity. Lots of belgian goodness in the flavor, yeast and spices, with a fantastic fresh hoppiness. Very tasty stuff here.

Magnifique bouteille verte de 750 ml, malheureusement un peu chère. Arômes de levure faisant penser à une bonne brioche fraîche. Légères effluves de houblon. Robe paille, très effervescente et couronnée d’une mousse très épaisse et tenant très bien. D’une grande finesse en bouche, où l’on retrouve une touche de caramel, la levure belge de MBC et une légère présence d’alcool. Le houblon se manifeste par la suite, avec un goût de résine et de pamplemousse, mais la bière ne devient jamais trop amère. Une bière d’une grande classe.

App.: Hazy golden with a substantial off-white foam.
Aroma: Big, strong, peppery hops, sweet, floral honey, light apple/white grape fruitiness, notes of citrus, gorgeous.
Palate: Medium-ish body, almost no carbonation, astringent.
Flav.: Plenty of pungent, peppery, resinous hops, sticky and sweet and fairly bitter, floral and piney as well; some warming, tingly alcohol to finish with lingering bitter citrus.
An interesting bottle, an interesting price, an interesting beer. Hat trick for Charlevoix.

2008-02-26. Bottle. Hazy yellow body with a huge flufy white head (4+). Dry lightly spicy aroma. Light fruit - zippy lemon notes, light must notes in the back. (7+) Similar zippy lemon, and lemon seeds in the flavour. Light peppery spice. Very mild udnerlying pale malt. A spicy triple or a dry fruity saison? Smooth Average to medium palate. Bottle (750ml). Shared with blankboy, GregClow, mabel, mds and jerc - my bottle via trade with Viper666. Cloudy light gold, decent white head. Very pungent floral/herbal hops aroma, solid sweet fruit malt. Average sticky body, astringent and long-finishing - really good.

Pours pale gold with a slight chill haze. A carefull pour released a torrent of spongy, white foam.
Half the glass was lively, airy head, before a quick retreat.
Within less than a minute there was only footprints of lace, and a coned center on the surface.
Aromatics are spicy and bristling with Belgian essense. Peppercorns, cloves, peaches, pears, melons, mint, coriander, pineapple, and wet grass leap forth. Phenolic, zesty, and earthy. Borderline medicinal.
Certainly not over-the-top hoppy, but a great balance of spice, hops, and yeasty funk.
The mouthfeel falls a bit short. The promise of a high level of carbonation doesn’t follow through after the beer settles down.
Light in body, but certainly could use some additional liveliness.
The Pallet is spicy and dry. The hops are more subdued than in the nose, leaving room for plenty of zesty, peppery crispness.
Bitterness is firm and lingering, and the beer is well-attenuated with a Brett strain, no-doubt.
The beer finishes with pepper-dusted orange oil, crushed mint, clove-studded pine boughs, and warming alcohol.
Wowza, this beer really opens up as it breaths and you get to know her. I had to kick up the numbers twice as I sipped, and I’m only finishing my first glass.

Bottle: Poured a deep lightly cloudy golden color ale with a huge pure white foamy head with perfect retention and some great lacing. Aroma of West Coast hops with some notes of citrus and grapefruit and some nice floral notes can also be detected. Taste is perfect balance between some light sweet Belgian malt with huge notes of floral hops with notes of grapefruit. Full body with a somewhat creamy texture with some great carbonation and no apparent alcohol. I really enjoyed how the hops presence brought aromatic notes but left a light controlled bitterness. As much as I had enjoyed the Chouffe Houblon I believe this one is even more enjoyable.

Chouffe Houblon inspired strong Belgian pale with aromatic American hop profile.
Wonderful head and pale golden looks. Flowery notes. Classy expanding carbonation. Limited bitterness. Aromatic concentration. Constant yeastiness. Growing dryness. Evolving taste. Alcohol under control. White grapefruit.
Not much not to like. If anything, the soapy hints and advanced sweetness level that do not meet their match in bitterness.

Poured a hazy apricot color, The head is huge, reminds me of my first Duvel upon first glance. But this is no Duvel. The head last for an eternity, eventually subsiding into a a thin blanket, leaving ample lacing in the glass. The carbonation is fascinating, a myriad of bubbles, seemingly rising to the surface in an unending stream. Possibly, the best looking beer I have ever cast a gaze upon. The aroma is a feast for the senses. A cedar/pine aroma is the first to become evident, with a doughy/yestiness coming into focus. Some black pepper spices along with a touch of alcohol. Glorious. The flavor is as complex as the aroma. The initial attack seems to be a light spiciness, tempered by the hops, which seem to be followed by a sweet bread like note (Challah perhaps?). The hops come back into the picture, lingering for an eternity. The alcohol is apparent on the finish, but is so perfectly balanced. Absolutely amazing.
