Bottle 750 ml
Aroma: strong wheat notes , slight grassy feel with soft wheat wrap. Aromatic rendering of weizen.
Look: clear golden with large creamy off white top. Remnants of lace. Handsome.
Taste: full bodied. Golden malts blended with wheat softens on Belgian yeast. Nice play. I am not sure if I would put this under saison. Belgian wheat with American bend.

Draught at The Toronto Festival of Beer, July 26. Pours a clear deep gold with an average size semi-lasting frothy of-white head. Lovely aroma is herbal, spicy and yeasty along with plenty of fruit, honey and a good amount of hops. Big, delicious, slightly sweet flavour of honey, herbs, spices, yeast and light hops. Medium bodied. Fantastic stuff!

Bouteille verte de 750 ml achetée chez La Barik (Trois-Rivières, QC). Arôme: Légère odeur d’houblons et de miel avec une pointe d’épices. Apparence: La couleur est blonde-dorée. Présence d’un large col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût d’houblons et d’épices avec une pointe fruitée. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement onctueuse. Moyenne effervescence en bouche. Arrière goût houblonné. (Rating #4409)

Clear pale amber beer, creamy off-white head, little stable, bit adhesive. Aroma: ripe fruits, bit funky, cultivated bretta, dairy, hay. MF: ok carbon, medium body. Taste: metallic, grassy bitterness, dairy, funky, hay, weird touch, some marzipan. Aftertaste: funky, little sweet, floral, hay, pretty bitter and dry. I can’t help myself but I have the impression that this brewery is overly hyped. I’ve had several of the Dominus Vobiscum series, and none were as good as their RB scores would like you to think.

UPDATED: OCT 29, 2012 July 29, 2012 - Toronto Festival Of Beers - draught at the Keep Six tent. Bright, clear, refractive and slightly oily gold with an average frothy fizzy white head (4-). Spicy classic saison aroma - fruity but not sweet, dry yeast - really nice (almost 8). Taste - pear, apricot, a little alcohol - but funkier, quite a nice bit of lemon and acidity. Average body, low-level carbonation, finishes reasonably quickly, slightly dry and acidic. Damned good beer.

750 ml bottle shared by Drew. Thanks, man! Pours a richer golden hue, a touch of darkness, some good glow with some nice carbonation. Frothy whitish head stays as a firm layer, laces ok. Aromas are firmly dry and gentle yeast, some bread, dough. Touches of apple, mellow spice, funk and florals. Initial is mellow bodied, some mellow bready and grainy malts, firm dryness and richer carbonation on the palate. Touches of florals, earth, apples and gentle pear. Middle is dry, crisp carbonation. Touches of spice, mellow sweetness as the beer remains quite dry overall. Finish is dry, a gentle spice, lively carbonation, and gentle tart lightly sweet fruit. Nice.

UPDATED: AUG 19, 2013 Beautiful white tower above the just as beautiful cloudy blonde pour. Fragrant, almost perfumey nose where cracker-like malts are quickly taken over by the intensely yeasty aromas that bring a broad fruit array, white dough and an intricate spicy complexity that bears more than a little of the Charlevoix house character (kinda lemony coriander-cinnamon notes surrounded by sweetish pie dough). In mouth, the larger than average bubbles feel authentic, if perhaps not as agressive than in many Belgian examples. The malt character is full, procuring a very forward breadiness that feels pastry-like and makes this Saison thicker than average, but agreeably so and still drinkable a plenty. It is accompanied by a serious hoppiness at the same time, adding citrusy notes and a limited, balanced bitterness that adds to the dryness perception when paired with the carbonation. Curious how one sip calls for another. They must have nailed this one pretty well, it has kept the distinctive Charlevoix character while highlighting nicely the contributions of each ingredients and remaining very drinkable. And the price tag feels easy enough at comfortably less than 10$ per 750 ml. That’s actually something I’ll buy regularly this Summer. A welcome addition to the already neat DV line.
