Draught @ Vices & Versa, Montréal. Pours clear golden with small white head. Clear aroma of malt and hops, with notes of needles and herbs. Sweetish, malty flavour with bitter hints of hops and some bready touches. Sweetish and hoppy aftertaste. Come on, is this a Saison? It tastes like a Heller Bock. Drinkable but nothing really special.

Big pop from the cap, followed by a highly clear, brilliant, sparkling golden liquid issuing forth. A very large white head sits atop with strong retention. Sediment left behind on the bottom. So far so good.
Wow, that is refreshing to smell....after nearly being beaten in to submission by sour saisons, barrel aged saisons, fruited saisons, non-saison saisons, American saisons, etc....I think this is actually a saison! Baked bread, dough, black and white pepper, delightfully spicy hops and very low fruitiness, with light mustiness, earthiness and cellar qualities. Very light malt qualities overall, or I should say, nicely attenuated. The only drawback/flaw I found was a fairly prominent compound from what I associate with adjunct sugar fermentation (sort of vaguely vanillin-cotton candyish); not sure the culprit, as I can’t imagine they used candi sugar. Could just be too much dextrose in the bottle conditioning. No alcohol noted.
In the mouth, the beer follows from the nose. Delightful baked grains, honey and a near perfect amount of bitterness/hop apparency. Noble hops galore, with none of the American-hopped saison madness traits. The attenuation is spot-on, being more dry than Dupont (though a bit less hoppy too keep the balance) and about on par with Blaugies. Delightful phenols, no alcohol and a wonderfully creamy, tightly carbonated, unfiltered texture. A touch of vanilla/cake icing-like flavor and perhaps just a bit of vegetal character from the hops, but these are nitpicked very minor qualms. By and large this is a fantastically drinkable saison in the best sense of the word. One I’d happily put right up with the best Belgian/French examples. Been a LONG time since I’ve had what was once one of my favorite breweries on the East Coast and it’s good to see that they are still absolutely killing it! Cheers and thanks for the bottle, Youri!

Golden, fairly clean. Spiced, herbal, citrus. Refined malts, less hoppy and less funky than expected, but an honest saison. Drinkable heavy carbonation. Well developed, nice stuff. (75cl bottle from Bière Révolution)

Clear golden color, with moderately peppery nose with a hint of funk. Mouth is nice and dry, but lacked much complexity. Well balanced and well made, but really lacking funk that I need in a saison. Still very drinkable and very sessionable.

Bottle 750 ml. Clear golden with a huge frothy white head and some nice lacing. Nose of fruits, bubblegum and mint with grassy/floral notes. Taste is citrus, grass, floral, spices and mint. Slight bitterness. Good refreshing Saison and it’s always a good news when Charlevoix expand is Dominus Vobiscum series!

Saison Charlevoix : Une bouteille offerte par Yan. Merci! Une bière dorée et sa mousse increvable. Une dentelle comme un relief montagneux. Un nez de levure et de houblons frais avec la naissance de notes fruitées. Des saveurs céréalières savoureuses avec des herbes et des fleurs vivifiantes. Une levure campagnarde qui fait belle figure. Un corps assez rond avec un pétillement qui répond au style et une texture plutôt accaparante. Une finale sur la levure avec des notes légèrement piquantes. Une saison très agréable à boire.

Bottle bought @ bierkompass.de. Pours hazy reddish golden with a huge frothy and tiny fizzy offwhite head that slowly dissipates while leaving lots of sticky trace on the glass. Smell is estery, slightly phenolic and slightly floral with biscuits, banana bread, hay, dry soil, white pepper corns, persimmon, dry wood and hints of lemon zest and sheet metal. Taste is tiny sweet, slightly bitter, estery and phenolic with white bread, ripe banana, black and white pepper corns, almonds, sheet metal, hay, dry soil, minerals, paper, pears and lemon zest. Mouthfeel is slightly watery, slightly dry, slightly astringent and light bodied. Finish is bitter, estery and phenolic with white bread, unripe banana, pepper corns, sheet metal, pears, almonds, hay, minerals and lemon zest. Bit too heavy on the metal phenols and banana esters…

750ml bottle from the LCBO. bright, golden pour, with a big bubble white head. big fresh grassy hop aroma with some good cereals. Great carbonation, solid mouth feel. Wonderful malty, cereal finish, with a good amount of bitterness. light peppery notes, with the sharp grassy hops, and touches of funk. nice saison.

Style et résumé: Saison rustique.
Comment: Bouteille de 750ml capsule métallique.
DeScription: Bière dorée avec une mousse blanche durable. Le nez est fruité agréable, la levure belge est bien présente. Il y a du citron. La bouche est fruitée, agréable, sèche, classique et rustique. Elle est mordante en fin de bouche, il n’y a aucune trace de sucre. Les bières de la série Dominus Vobiscum sont toujours réussies, celle-ci ne fait pas exception.

750 ml bottle. Hazed golden orange with a puffy white head. Nose is lovely roses, wheat, lavender, honey and lime zest. Crisp and creamy with a tickling sparkle, a joy to drink. Taste is subtly sweet nutmeg, grain, lemon peel, tangerine and wintergreen. Better than the brewpub Cuvee des Fleurs; my new #2 saison.
