Sample at the Amazing Festibière de Laval 2011 (NEVER GO THERE).
Appearance : Clear yellow with small head. Light lacing.
Aroma : Lots of spices with nice yeasty phenols. Light bananas.
Taste : Lots of spices with lots of yeast. Light malt and light hops. Finish is quite yeasty.
Overall : Quite drinkable, very nice yeast. Maybe a bit too spicy. Nice malty finish. Very well made and well balanced.

Drank on tap (12 oz) at Saint-Graal in Ste. Thérèse (Quebec) on January 19, 2012. Golden blonde, thin head. Aroma of malted barley sweetness, notes of dried herbs. Taste of hopped dried herbs, slightly malty aftertaste of dry alcohol. Nice but not as good as the Dominus Vobiscum version!

En fût. Verre de 12 oz dégusté chez Brouhaha (Montréal, QC). Arôme: Odeur de fruits et d’épices. Apparence: La couleur est dorée avec une très faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût d’épices très présent avec une d’agrumes et d’alcool. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement oncteuse. Moyenne effervescence en bouche. Arrière goût légèrement fruité. (Rating #3815)

A hazed golden ale with a thin hite head. In aroma, sweet mat with orange peels, candy sugar, a bit of tropical fruits. In mouth, a sweet candy sugar with bananas, bubble gum, coriander and curacao, warming alcohol, not bad. On tap at Festibiere de Gatineau, May 28 2011.

My Bottom Line :
Ample spices (anise, coriander, orange seeds) meet floral hops and slick caramel in this refined Belgian-style Strong Ale.

Further Personal Perceptions :
-A veil of foam covers the misty golden-hued amber.
-The nose is overtaken by spices. None of the beer’s depths can be perceived, but that is still one impressive spice mélange (grains of paradise too?).
-The finish is laced in alcohol heat; spices and hops blend well here as well.
-Silky caramel lends a classier aura to the flavor profile.
-This may have more character than their regular Tripel, but that doesn’t mean its better...
-I would still see this having success as a bottled DVobiscum Ambrée, a Maudite-like brew.
-This is as polished as any other Charlevoix beer. I wouldn’t expect anything less from them, frankly.

UPDATED: AUG 14, 2011 Glass on tap at Bateau de Nuit. Clear dark gold pour with white head. Aroma is very citrusy, lots of lemon, orange peel, grapefruit and some yeastiness. Taste is more on the herbal/bitter side, more orange peel, alcohol. Palate is quite dry, sharp bitter finish, prickly carbonation. Good brew.
