COMMERCIAL DESCRIPTION
Our IPA gets its characteristic bitterness from a combination of Cascade and East Kent Goldings Hops.

My Bottom Line:
Timid wooden and citrusy hoppiness swerves around the brown sugar-like sweetness of this very drinkable, yet adolescent India Pale Ale. A few more batches from this brewery in its infancy will surely yield a more cohesive product.

Further Personal Perceptions:
-Frothy foam settled into the hazy caramel blond.
-That sugary maltiness recalls maple sap at times, but not of the round and seductive kind.
-The wooden and dry hoppy finish is quite understated, letting that sugary component return.
-The many tiny bubbles’ softness helped increase drinkability.

Sampled at the brewery. Pours a lightly hazed golden amber with a thin-moderate linen white head. Pleasant aroma of citrus along with some notes of sweet malt. The flavor begins with some lightly sweet malt followed by some grassy hops. Mild-moderate hops bitterness at the finish. Medium bodied. This is a nice solid English IPA.

Small growler fill from the fine folks at Chatham. Pours a hazy medium brown. Still, no head. Caramel and old hops, cheesy and weird. Somewhat gross potpourri flavors, and stale cheese curls. Skunky, empty, bitter. Had to spit this one out.

A very fine IPA right here. Fairly well balanced with a strong kick of hops at the tail end. Pretty bitter, medium body, leaves a bit of an aftertaste. Not mindblowing, but very solid, I’d look for it again.

growler-pours a light tan ring for a head and amber/copper color. Aroma is earthy/funky. Taste is smoke, light/medium malt-caramel, earthy hops. Interesting, smoky/English IPA. Will look for this again as the brewery seasons.

growler courtesy of jcwattsrugger. Pours copper with thin white head. Aroma is hoppy, thin lemongrass nose. Flavor, had some light smoke elements, malts, some citrus hops with a bitter finish and some spicy hops. Overall finish had notes of oxidation.

Growler courtesy of jcwattsrugger. Pours clear copper with gold edges and thin white head. The aroma is malt sweet with a bit of roast moving into spicy, earthy and a bit grassy. The flavor is sweet with malts, bitter hops from a thick layer of spicy and earthy hop leafs. It picks up a pleasing modest level of malty sweetness into the finish.

Amber with no head to speak of. Little to no aroma. Tastes old, oxidized, dirty and there is no carbonation. Slight hop/astringent aftertaste.

Tried at NY TAP festival. Not a big IPA in any sense of the word, but cleanly made, and satisfying. If you have friends that you’re trying to get on the IPA bandwagon, this is a good entry-level ale.

UPDATED: JAN 2, 2009 On tap @ Coles in Buffalo NY. Not a bad IPA but seems a tad jumbeled & not very balanced. The elements for a good IPA are there but IMO just needs some more trial & error. Pours a slightly murky amber orange. Aroma is caramel malts sweetness with some hop aroma in the background. Taste has nice hop bitterness upfront followed by some maltiness that could use some more cohesion.I expect that this will get better as the brewery grows
