COMMERCIAL DESCRIPTION
Produced utilizing fresh honey without the addition of artificial flavorings, concentrates or artificial colorings. Even though greater production difficulties occur because pure, raw honey is used for fermentations, the intensity of flavor generated through this technique is worth the effort. Exhibits a richness similar to a fine liqueur, this dessert-style beverage is not fortified, hence, it should be consumed shortly after purchase to enjoy its natural and rich honey flavor. Chaucer's Mead can be enjoyed in one of two ways, either chilled or heated with spices to create a delicious wintery drink. The honey is produced in hives throughout Northern California and is composed of a blend of three types; orange, alfalfa and sage. Each of these components brings a unique quality to the blend and contributes to the overall complexity. Orange adds a pungent orange blossom flavor and has light color. Alfalfa is neutral in flavor but yields a dark, amber color. Sage, on the other hand, has a mild taste and a light color.

UPDATED: FEB 4, 2003 A little too sweet. I like it better without the spice packet. Still a little too sweet though. I had this at room temperature. One of the only commercial meads I've ever seen though so you have to give them credit for trying; mead takes a long time to make and it's not easy to do without spices to cover up any flaws. Good for pouring in a horn and passing around, but I wouldn't want to drink a whole lot of this because of the intense honey sweetness. Still, it seems kind of magical when I drink it. The feeling you get from drinking this is different but pleasant.

UPDATED: AUG 16, 2003 This mead gave me reason to hope for both a taste for mead and maybe even a taste for wine one day. Lurgashall's English mead came on too sweet (and cost $10 for a 12oz bottle). This is drier, but still plenty sweet. There's no carbonation and it's kind of sticky. There are notes of alcohol, and biting sulfites that give the smell of honey a little character. The taste of alcohol is subdued, but one can pick up the sulfites and of course it wouldn't be mead without a sweet honey flavor. Very wine-like. That's for the plain mead at room temperature. I used the rest of the bottle to make mulled mead. The bottle came with two bags of clove, cinamon and ginger for mulling. The warmth and spices just added that much more to an already pleasant drink and gave it a slight coppery tint. Either way, this is a good desert drink and would be perfect for cold nights. I'm definitely going to keep a stock of this for winters from now on.
