4.5 AROMA 9/10 APPEARANCE 3/5 TASTE 9/10 PALATE 5/5 OVERALL 19/20
Oh yes... I have been wanting to try this for a long time now. Trappist ales are my favourite bar none, and a special offering from a top-three brewery? I am poor as hell, but I needed to celebrate my finals. 750ml corked bottle, into a Trappist glass. Pours a lovely honey-gold colour with a slight but very noisy head. Fills the air with that wonderful scent that only Belgian ale can produce. Aroma is sweet, nice mingling of spices, very faint alcohol. Flavour comes out with sweet fruits, not at all overpowering, spices and Belgian yeast, a bit of heat from the alcohol on the close, medium finish. Excellent balance and much what I expect from Chimay. This is a beautiful Trappist ale to spend an evening with near a warm fire with a large book.

3.5 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 2/5 OVERALL 14/20
Aroma is belgian yeast, spice, flowers, and fruit, especially banana. Flavor starts sweet and pleasant, but finishes with a sharp and not especially pleasant ginger/cardamom spiciness. To me this is a little on the gimmicky side. It’s good, but I expected better from Chimay.

3.8 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20
(Bottle, 0.75 l, at Black Door, 20121214) The beer poured golden and hazy. Its head was medium sized and white. Aroma had banana, fruitiness, Belgian style yeast and malts. Palate was medium bodied with medium carbonation. Flavours were fruitiness, banana, malts, Belgian style yeast, hops and bitterness. Aftertaste was yeasty, hoppy and bitter. The wheat beer banana was a bit surprising as was the hoppiness. The beer was very good, different and balanced.

4.2 AROMA 8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20
Hazy golden coloured beer with a small white head. Moderate malty and slightly yeasty perfect balanced aroma. Very good and special flavour. In the beginning very soft and smooth, then a bit acidic due to the carbonation and then very fresh, malty and medium sweet. Very nice brew, alcohol is perfectly hidden. Never noticed it. 3.4 AROMA 6/10 APPEARANCE 5/5 TASTE 7/10 PALATE 3/5 OVERALL 13/20
Bottle shared with McTapps. I mean, what a beautiful bottle celebrating the 150 years. But in the end this one ist just a nice stronger belgian blonde with some yeast in the nose, high carbo und delicious aromas of vanilla and caramel. Good beer but a Chimay rouge for example beats this one easily. Nice, very nice - but not outstanding.

3.2 AROMA 6/10 APPEARANCE 4/5 TASTE 6/10 PALATE 4/5 OVERALL 12/20
Bottle shared with MichaelBruch. What a beautiful bottle! Deep blonde in colour with steady and big head. Taste of sweet yeast cultures, bubbling and very fine. Further there are notes of champagne, basil, grass and flowers. But honestly the hopes were not really fulfilled for this beer which was around 7,50 Euro.

3.7 AROMA 7/10 APPEARANCE 3/5 TASTE 8/10 PALATE 4/5 OVERALL 15/20
Pours out a beautiful pale golden with a shimmering yellow body, light sparkly white head and solid carbonation. The nose has gorgeous fruity and estery yeast with notes of clove, coriander and apples. The flavour is rather sweet with light toasty malts and caramel notes. A moderate alcohol presence on the finish with a pinch of spice. Picking up some light vanilla and cardomom spices. Not as good as Chimay White, but good.
