Aroma: Smelling of fruit, bananas, jelly beans and candy.
Appearance: A hazy straw colored beer. A low white head with small lacing and good curtains.
Taste: Tasting sweet wheat bread, banana marmalade and champagne.
Palate: Medium high carbonation, a fresh texture. A medium body with a good dry finish.
Overall: Nice, well-done and goooooooooooooooood!

Medium sized, vast white head, change slowly, on top of a darker yellow to orange colored beer.
Smell Belgian yeast, fruits like peach, lemon, apricot, cactus, pine, marzepin, dough, biscuit, sweet grains, alcohol, porridge and medicine.
Taste fruit, apricot, peach, yeast, grains, alcohol, sharp, flowers, hint of soap, hint of honey, spices, hint of something wood a like and some dry herbs.
Aftertaste is grainy, yeast, light sharp some alcohol and bitter.
Low carbo, soft light blown light spicy mouthfeel, medium to lightly fuller body and a creamy texture.
Maybe it’s too young. It was a bit too yeasty and sharp but next to that pretty well balanced.

On the eleventh day of Christmas. Pours hazy gold with a solid white head that left ridiculous lacing. Aroma is grass, Belgian yeast, earthy and banana. Taste is sweet with some spiciness. Medium bodied with sticky texture. Alcohol is well hidden. I imagine Santa is drinking a bottle of this to keep warm tonight.

Pours a hazy golden with a fluffy white head. Aroma is Belgian yeast, banana, bubblegum, fruity sweetness. Taste is Belgian yeast, pineapple, spicy, very little bitterness. Some very subtle lacing. Nice bit of carbonation is appropriate. I was very pleased with this ale. One of the best Belgian Ales I’ve had. Well done.

Hazy gold. Imtense smell of belgian yeast. Vanilla , sweet but soon strong hop aroma. Sugar and caramel a lot. Fruit like banana . Final very dry and bitter. Pleasant but not so special. Good recipe to celebrate am important anniversary of beer tradition.

750 ml bottle from Country Club Liquors. Nose is coriander, bits of candisugar and yeast, and hints of bananas and bubblegum. Clear yellow gold with a big off white head. Flavor is slightly bitter, slightly sweet, with gobs of spiciness and light fruits.

27/11 0.75 bottle from central El Corte Ingles, Bilbao. The only interesting thing I could take, as my "fridge" was air temperature of 12°C. It poured hazy body with small head. Excellent cloying aroma, coriander, citrus, Belgian yeast. Flavor was sweet, vanilla, biscuit, spicy, even with note of caramel and hint of cocoa. Quite a lot of carbonation in my opinion, but then, it probably helps in hiding alcohol which was never noticed. Creamy, full bodied with long, sweetish and slightly acidic finish that reflected the flavor. Very nice beer, although, yes, I expected even better for a special Chimay, leaving impression that this is inferior compared to their regulars.

Oh yes... I have been wanting to try this for a long time now. Trappist ales are my favourite bar none, and a special offering from a top-three brewery? I am poor as hell, but I needed to celebrate my finals. 750ml corked bottle, into a Trappist glass. Pours a lovely honey-gold colour with a slight but very noisy head. Fills the air with that wonderful scent that only Belgian ale can produce. Aroma is sweet, nice mingling of spices, very faint alcohol. Flavour comes out with sweet fruits, not at all overpowering, spices and Belgian yeast, a bit of heat from the alcohol on the close, medium finish. Excellent balance and much what I expect from Chimay. This is a beautiful Trappist ale to spend an evening with near a warm fire with a large book.

Aroma is belgian yeast, spice, flowers, and fruit, especially banana. Flavor starts sweet and pleasant, but finishes with a sharp and not especially pleasant ginger/cardamom spiciness. To me this is a little on the gimmicky side. It’s good, but I expected better from Chimay.
