Bottle from Mane Liquor. Pours cloudy but vibrant orange with an extremely thick white head - like marshmallow. Sits there for the entirety and leaves amazing layers of lacing. Nose shows coriander straight away. Quite spice driven with some heavy dried apricot behind, a touch of sourness coming through - maybe grapefruit-like. Also has some lemon rind as it opens up and banana. Taste showcases the herbal-esque spices. Loads of coriander. Lemon comes through. As it warms up, banana takes over from the lemon - fills up the palate. Apircot takes a back seat. There is a small dose of ethanol with a fair bit of warming in the aftertaste which is a little off putting but it’s probably my only qualm. Very solid stuff as you’d expect

Bottle, courtesy of yngwie. Pours golden with a white head. Aroma of coriander, soap, yeast, some alcohol and cardemon. Flavor is sweet and fruity with some sugar, alcohol , coriander and spices. Medium body, average carbonation.

Bottle from LCBO. Pours clear gold with a white foamy head. Light aroma of warm spices. Taste is full of spices (clove, nutmeg, etc), with some alcohol hints. Frothy mouthfeel. Quite good.

Pours hazy gold into a trappist glass. White micro head with excellent retention recedes leaving sheet lacing. Cracker, biscuit and hay aromas. Medium bodied with sweet caramel and dusty yeast upfront turning to summer flowers, herbs and hay in the lasting earthy bitter finish. Yummy.

Forgive me, I’ve been living nearly dry up in the arctic and did not even notice the anniversary of the mighty Chimay trappists and their brewers on this fine planet. Somehow I found myself amidst the lakes of Ontario and there be a few bottles of this celebratory Chimay brew!
I pulled off the wire top and the cork popped soon after, a huge scream to escape from its bottled confines. Has a relatively clear body for a Chimay, only slight fog, and a gold-orange colour. Head is decent but not excessive. Lots of sweet orange on the nose, sugars, fruitiness.
Flavour is a strong fruity mix with a hint of barnyard, caramel, orange peel. Palate is sadly cloying in a way I don’t remember the other Chimays, very chewy, makes me want a shot of water after a few sips. This is a good Belgian brew but I find it slightly out of balance compared to the tried and true trio of the trappists; however I’m immensely glad I found a bottle while it was around.

Bottle from Yamaya. Very nice flowery, spicy aroma, with some fumes and noticeable hopping. Hazy apple juice, honeyish color, thin head. Initial gives sharp fruitiness and some hits of booziness / mid goes in grapes, honey, pears / final balances out and adds light spice, something minty or perhaps anise. Medium body and sharp carb burn. Very nice. Tastes rather like Chimay blue, but the hops and spice give it an extra dimension.

Bottle killed at the Blind Monk. Hazy golden colour with a big frothy white head. Banana, spices, and sour aromas. The flavor is banana, fruits, spices, hops, and barrel notes. Huge hops and alcohol notes for a Chimay. Slightly disappointing.

Hazy golden colour with a big frothy white head.
Banana, fruit salad, alcohol, yoghurt, mild sourness and some medicine in the aroma. The flavour is fruits, alcohol, hops and quite a lot bitterness. Alcohol is warming a lot. The alcohol is rather evident for a Chimay brew. Slightly disappointing.

(Bottled, 0.75l) Hazy golden with a smallish head. Grainy maltiness in the nose, like the beer was already aged, as well as lots of orange fruitiness and some spices. Tripel-fruity flavor with grainy malt, some lime-citrus notes, light alcohol burn. Quite full body, yet even refreshing and drinkable for the ABV. Clearly related to the Triple, but leaning towards strong blonde ales. Could be better with slightly lower ABV, but I guess they had to go with a full ten percent (for the first time) to make this brew special.
