UPDATED: AUG 1, 2007 Fruity aroma, wonderful foamy head. Sweet, malty and spice flavors are overwhelming. Finish is equally enjoyable. I say the brewmaster at Chimay has few peers.

First Belgian experience. Had to see what all the beer geeks talk so much about. Very pleasant taste. Sweet and fruity. Achohol very noticable. Maybe the ultimate late night beer in a goblet experience.

UPDATED: JUL 27, 2005 Rating #1 (6/5/02): Bottle from 11/2000 (10 5 8 5 18). A dark brown amberish color with a foamy off-white head. A sweet fruity and floral aroma with a strong malty presence. The flavor is moderately sweet and more smooth and poised (almost understated) than I expected, almost a regal compelxity. A strong body that burps and lasts a pleasantly long time. Rating #2 (7/26/05): Bottle from 02/2005 (8 4 8 4 17). A dark brown color with ruby highlights in direct light and a creamy tan head. A ginger, cinnamon and clove spiced aroma with some banana bread, plums and sweet malts. Intense pulls on the aroma bring forth a nice burning spiced alcohol element. A strongly spiced flavor with a lively fizzy feeling in the mouth that stands on top of a base of raisins and sweet malts.

Best Abbey beer ever. Garanteed headache though, when you have more than 2 :-)
4.4 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20 fraternie (777) - Chicago, Illinois, USA - JUN 1, 2002
Dark color, incredibly soft mouthfeel, powerful initial balanced malt blast of fruit and caramel flavors. I didn’t find it as smooth as the Red, but its powerful flavor compensates for this. Another world classic from Chimay.
3.2 AROMA 6/10 APPEARANCE 4/5 TASTE 6/10 PALATE 4/5 OVERALL 12/20 Ernest (5609) - Boulder, Colorado, USA - MAY 30, 2002
UPDATED: APR 17, 2012 Bottle.
Head is initially large, frothy/fizzy, light brown, mostly lasting.
Body is hazy dark amber, bottle conditioned.
Aroma is lightly malty (caramel, bread), moderately yeasty (mold, wet cement), with light notes of apple, raisin, and clove, hint of honey.
Flavor is moderately to heavily sweet, lightly acidic, lightly bitter.
Finish is lightly to moderately sweet, lightly acidic, lightly to moderately bitter.
Medium body, watery/velvety texture, lively carbonation, lightly alcoholic.
Perhaps the best of the Chimay line, but very simple and ordinary.
