Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Poured into a tulip glass at cellar temperature. Colour is cola like, with a modest short lived tan head. Aroma is light caramel, alcohol and ripe berries. Light body, lots of carbonation. Taste is sweet but not overwhelming, notes of caramel, ripe berries. No hint of the 9% abv. The flavours are subtle. I highly recommend trying this beer.

I bought this bottle in a monoprix in Paris. I drank it tonight at home. It is a bottle from the year 2014. Since a long time that I was expecting to note this beer. It is the true that it is the most commercial trappist beer, some marketing, even though the quality of this beer is great. First, I was impressed with the foam, compact, staying a long time, white and brown. The carbonation is normal. The taste is really good, notes of malt, hop, grapes, plum, final note of honey, we smell the alcohol but it is well integrated in the beer. There is a persistent taste of sugar but it is pleasant, licor, a love story that you drink step by step before to sleep.

0,33 bottle. This is a rich, tasty ale with a strong head and strong aroma. Beautiful late at night or after a good lunch. Just lovely and quite affordable for the quality. Excellent.

Bottle from Tesco. Dark and bubbly with big airy head, which quickly disappears. Aroma massively fruity with yeast, grapes, roses, some vegetale notes and slight spiciness. Rich, complex and warming.

Bottle at home with dad. Deep, dark brown with eggy white, bubbly head. Can’t smell as I’m a bit crook but on the tongue I can pick up roast, spices, raisin and some alcohol on the finish. The taste is predominantly sweet but not too sweet. There is more in the complex aromas than on the tastebuds. The finish is long, warm and spicy. Looking forward to finishing the glass.
