COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

750 mL bottle poured into a tulip glass. Pours a cloudy dark brown with a two finger off-white head. Aroma is rich with roasted malts, dark fruits, and yeast. Taste is sweet with malts, dark fruits, brown sugar,yeast, and finishing with some alcohol warmth.

Ivory-white head pours on top of deep ruby red, slightly cloudy, beer. Dominant aroma is esters, pears, green fruit. Also some malt character, perhaps a light to medium caramel, and a hop vegetal component. The esters are there on tasting, but sit behind a complex malt ensemble: roast malt, burnt toffee, and liquorice. Quite a sweet finish, but the 9% alcohol is well hidden. Will drink again.

Bottle. Pours hazy dark brown witg largish beige spongy head, caramel aroma, medium carbonation, slightly sweet caramel taste with medium salty ending. Very very good as known widely.

Pours a dark brown with a white head that quickly receds. Aromas bring pears, plums, raisins, white grape juice, nutmeg, clove, molasses, and apple juice. Flavours bring caramely malt sweetness, burnt sugar, and a generic spice note (clove maybe?). Leads into a semi-sweet, somewhat bitter, long finish. Effervescent carbonation lifts the sticky mouthfeel a bit. Fairly full bodied.

Aroma: Malty, spicy, sweet.
Appearance: Dark brown color. All time, beige head.
Taste: Medium sweet, spicy, light yeasts, fruits.
Palate: Medium body. Light warming finish.
Overall: Pleasant belgian. Not so extra.

This is for the 2015 Chimay Peres Trappistes that I received from someone who just returned from Belgium. The aroma is yeasty, malty, and I pick up a hint of apricot and molasses. Quite nice. Looks a bit like a raspberry ice tea under the light. Head is fluffy and almond in color. The taste is that of Belgian yeast and malt with a bit of fruit. There’s a bit of carbonation burn to the palate, but it fades quickly, leaving a medium oil slick on the tongue that’s not unpleasant. I really enjoyed this beast and will be on the lookout for it the next time I head to the liquor store. Great stuff.

Appearance: Deep mahogany and opaque with thing but persistent foam. Aroma: Brown sugar and raisin malt sweetness with moderate clove-phenol (medicinal like) and a low mineral quality. Flavor: Chewy cereal and caramel malt with med-low european hop spiciness. Clove comes through in the mid with the finish being mostly raisin and stone fruit. MF: High carbonation mixed with a warming alcohol and a stern hop bitterness. Finishes warm and dry.
