Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

First Chimay for me. This is quite complex and strong beer in 33cl bottle. Hint of caramel and sweetness. Minimal head, dark brown color. Need to try this again in the future.

Small bottle, served in goblet. Appers dark and ruby/cherry, at first thick head, but quickly diminihes to minimal and slightly beige. Very clear. Aroma is malty with terrific and distinct cherry. You can smell sourness, probably stemming from candi syrup. Lots of fruits (dried ones), some breadiness. Aroma is perfectly mixed. Taste consists mostly of malts, some bread crust, toastiness, maybe nuts and some dried fruits. Also a hint of sourness. Its medium-bodied, mildly carbonated and with quite long finish. There isnt any distinct bitterness, but very pleasant alcohol warmth in mouth. You couldnt be negatively surprised by this beer, one of the best Belgium has to offer in wide distribution and at reasonable price. Always enjoyable.

Soft gusher. Small shortlasting head. Aroma is slightly sweet and mild oxidized, candied sugar, honey, raisins, caramel malts, yeast, nuts, butterscotch, burnt caramel, alcohol, grass. Taste is slightly dry, burnt caramel, yeast, hay, caramel malts, nuts, raisins, candied sugar, alcohol, grass. Medium bitterness, slightly dry yeasty mouthfeel. Nice.

Pours a medium brown with a pale thin head. It has a slightly fruity aroma and a bit of a tingly effervescence. The fruit flavor isn’t very strong nor does it last very long. The flavors is pleasant but it slips right by and doesn’t linger. For the high alcohol content there is very little or no burn or aftertaste. It drinks very smooth. It is light, smooth, and pleasurable to drink but not as good as I expected. I’d enjoy sitting back and relaxing with one of these again but at ~ $9.95 for an 11.2 oz bottle it isn’t really worth that price.

750 ml bottle (batch from February 2013). Dark amber/light brown, slightly hazy, with a nice, creamy and persistent off white head. Good lacing. Pretty nutty and toasted nose, moderate alchool presence, tons and tons of dark/dry fruits (especially plums and figs), perhaps a touch of bitter dark chocolate as well. Lighter and more zingy than expected, but very clean and tasty. Less alchool compared to the aroma, just a mild warming sensation. Again nutty, slightly toasted and much more fruity (even some blackberries and mature pears). A bit yeasty in the aftertaste. Average to lively carbonation, medium body, slightly oily texture. Solid but not mind blowing.

Rating a classic beer is not easy for a newcomer. Here’s my first attempt. Liquorice and molasses with gently roasted malt. Finish with a sharp liquorice alcohol feel. Alcohol rather felt but in a subtle way. Elegant beer. One of my all time favourite. Probably had a few hundreds bottles so far in my short life. Never met a beer enthusiast who doesn’t like this beer.

750ml bottle at R2L in Philadelphia, PA. Sets the baseline for what to expect from a belgian beer. Smooth character with a depth of flavors. Notes of candied sugar and sweet plum tingle the tongue. --you've been Dubbed.

In bottle. Beige, frothy, rocky head. Persistent. Copper. Cloudy. At nose intense, a bit persistent. Chestnut honey, caramel, hezelnut, dried fruit, brown sugar, plums. , also a bit of yellow and white fruit, maybe peache and pear Very complex. The big amount of alcool is not perceived. Strong body, warming sensation. Intense and persistent. Very balanced, the sweet entry isbalanced with a discrete bitter lingering all around the mouth. The alcool in the throat is not aggressive. Beautiful
