COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

UPDATED: MAY 16, 2007 corked 10/03. Stupid huge head pilled high with billions of (nitro?) bubbles. It hung around for awhile too. The nose was malty, alcoholic, and caramel like. It tastes very good but I was let down by the HUGE alcohol taste. It was excessive, especially for 9%. I got malts, candy apples, and ,oh yeah, alcohol. I’m sure this beer mellows well with time, and maybe that would change my opinion.

Very dark brown with foamy off-white head. Medium bodied at best, with soft carbonation. Less aroma than expected, even when warmed up. Tastes of malt and dried fruits, with a slightly metallic tang at the end. Little bit disappointed to be honest.

Bière brune aux reflets rouge-orangées, voilée d’une multitude de particules, très bonne effervescence, et surmontée d’un coussin de mousse brunâtre léger et mince. Arômes dominants de caramel/cassonade (ça fait un peu penser à du cola par moment), et de petits fruits foncés bien mûrs voire confits (raisin, cerise, prune, datte…), avec un peu de pain grillé, et d’autres odeurs sucrés plus subtils rappelant soit le bonbon aux fruits (réglisse rouge), ou la pâtisserie, le gâteau. On décèle quelques effluves épicés également, surtout de l’anis. Très beau nez bien agréable, belle complexité, intensité adéquate. En bouche, pétillement élevée sur la langue, breuvage bien mousseux, onctuosité moyenne au palais. Au goût, pain grillé et pâtisserie, avec saveurs de caramel, cassonade et petits fruits foncés, mais c’est moins sucré en bouche que ce que laissait présager le nez. On décèle une légère acidité rappelant presque les agrumes, l’anis au goût est très subtil, et la finale apporte une amertume bien sentie sans goût houblonné particulier. Tout au long de la dégustation, l’alcool est bien présent au goût, un peu trop selon moi. L’intégration des différentes saveurs me semble laisser un peu à désirer. On me semble également perdre un peu de complexité par rapport au nez. Il s’agit d’une très bonne bière néanmoins, mais un peu surévaluée selon moi…

Pours dark brown with minimal white head. Aroma is mostly alcoholic with hints of caramel and dark fruits. Taste is alcohol at first but the longer you drink it it becomes sweeter and nicer. Amazing.

Aroma is sweet, of brown sugar, dates, and oak. Appears a hazy orangish-reddish-brown, with caramelish-white foam, but not much lace. Tastes of mildly bitter oak, sweet dates, and nearly hidden brown sugar, a little alcohol burn on the end. Palate is fizzy and light. Overall, a great bear, delicate yet interesting.

Excellent Belgian ale. Brown with sweet flavor and heavy carbonation. Caramel and chocolate taste. Fantastic beer. Will get again, but pricey.

Magnum datant de 2012 bu après un déménagement pendant une journée exceptionnellement collante et humide. Rafraîchissante? Pas vraiment, mais c’est une excellente récompense après une dure labeur. Robe cuivrée aux reflets rougeâtres subtiles, une mousse beige domine la bière. Des notes de fruits rouges confits et de caramel explosent, c’est clair qu’il y aura une certaine madérisation en bouche. C’est effectivement le cas, mais ce n’est pas du tout négatif. Fruits rouges, toffee et chocolat s’amalgament pour donner un résultat cochon et goûteux, mais jamais lourd. Un classique toujours agréable à revisiter.

BOTTLE 33CL Look: dark ruby cloudy, light beige medium head. Aroma: rich dried fruit (plums, raisins), light toasty notes, winy. Taste: dried fruit, red wine barrel, spicy alcohol, a tad peppery, the body is not as big as expected.

Bottle 33cl. Dark reddish brown with a light beige head. Dried fruit, jam and a bit of yest in the nose. The taste compliments the nose with some banana flavour. Medium length. One of my favorite trappist beers.

The aroma is faint and slightly floral. There are other smells lingering beneath that I can’t identify. The appearance is dark brown and clear with a slight, consistent head. The taste is complex; there are so many different things going on. The palate is full bodied with a creamy texture and an almost perfect finish. Overall, this is one the greatest ales that I have ever had.
