COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

This Chimay is similar to Chimay’s red label Premiere with a more pronounced alcohol taste. It definitely has a nice caramel aftertaste and is outstanding overall.

UPDATED: JUN 21, 2009 This ale can be described using just one word: chef-d’oeuvre. Full-bodied, chocolately, malty, toffeeish, fruity and much more. A world classic. [4.7] Re-rate. Version 2003, imprisoned in my cellar for 6 long years. It got drier, more herez-like and alcoholic. [5.0]

Beer pours (in Chimay glass) a dark brown, near black with some dark red that light can penetrate with a medium amount of off-white head that dissipates, but develops a smooth top of head about 1/4 inch thick. Aroma is of grape, plum, raisin, and fresh, sweet fruit. Flavor is of grape, plum, raisin, malt, and fresh, sweet fruit with a lightly sweet chocolate ending. Very smooth. Outstanding. Bottle is 25.4 oz, cork is dated 12/02. No alcohol aroma or flavor detected. None. This beer could benefit (IMHO) from being opaque, and not so bubbly on the tongue. Those are this beer’s only faults. However, the head more than makes up for the not-so-opaque appearance and this brew being smooth going down more than makes up for the initial tingling on the tongue. No beer is perfect, including this one, and I don't like giving out perfect scores, but this is as good as it gets. Sampled at 72 degrees Fahrenheit.

I cannot appologize for the high ranking. This is truly the best beer I’ve ever had. I would rate the Premiere a bit higher, if possible. Great with a cigar and cheese or nuts. I am in heaven when drinking this beer.

Wonderful. Strong. Tasty. Looks good in the light. There is no alcohol taste at all.

Damn, this is the best beer Ive had. Great color, awsome head and the flavor is so good. When you drink you get warm, damn this beer went very well with my Rickenbacker bass. I give this world class act brew an: A+

Deep brown, but don't let the darkness fool you. Every swallow you take, the smoother it gets! This is something that you drink not too cold, let it sit out for 20 minutes or so to warm up. My favorite Belgian ale!
