Aromas of spice (nutmeg, clove, anise) carmelized brown sugar fruits (raisin, orange, plum, banana) and a blue cheese like yeastyness. The nose is deep and alluring, strong and inviting. Some carmelly malt is present as well, but the floral spicy yeast dominates.
Flavor is like the best apple cider you ever had. A woody malt start flows slowly into a rich fruity mid with carmelly finish. A delicate and incredilbe transition of flavors, like really good scotch. The spices noted in the nose intermingle with rich dark fruit malts and elegant belgian yeast in a most pleasant balancing act. You taste alchohol but its only one character in a complex mingle.
Palate is equally complex and marked by smooth and definite transitions. Mild tang and tingle build to sour character while the mouth becomes increasingly silkly. After goin thro a dry phase there is a sweet whisper of a finish, slightly sticky mouth, like you just ate a nectarine.
I don’t use perfect as a deScription very often because I want to leave the perfect beer out there as an unattainable ideal, but this beer is damn near perfect. Its because of beer like this that so many american belgian style ales fail miserably.

Bottle. Dark, murky brown with frothy cream head. Aromas of bread yeast, caramel malt and spice. Huge, rich caramel malt along with banknotes of spice. Quite sweet and deliciously smooth.

A thoroughly luxurious Belgian abbey ale, Chimay Blue pours a flawless ruby-brown color with a small but steady white head. Aroma of rich slightly roasty brown sugar- caramel maltiness, along with yeasty candy apple notes. Some cocoa-coffee notes also, this is the first abbey ale I've sampled with a coffee malt accent to it. Taste is caramel malt, candy yeast, some dark chocolate, vanilla, and red fruit. Slight boozy tinge but minor. Mouthfeel however strikes me as an unusually thin and weaker texture, the low point for this brew in my opinion. Overall still a rich and flavorful rendition of the style, less delicate in its flavor profile than others. Not my personal favorite but well done.

33 cl bottle, Vintage 2015. Served in Trappist chalice. Poured a very dark brown with a small frothy one finger ivory head. Aromas of sweet caramel, flowers, vanilla, cherries, banana, dark fruit, candy. Taste: Caramel, vanilla, candy sugar, dark fruits, banana, coriander. This is one fantastic tasting brew! Medium to full body. A very spicy, sweet frothy mouthfeel with a dry bittersweet finish. The best of all the Chimay!

Chimay Blue. Dark Brown Color. Dark Fruits and hints of coffee in the Aroma. Sweet Caramel, flowery beginning. Hints of Port or sherry in middle. Spicy and Sweet Finishing. Rather Medium bodied, Medium carbonated, very well Balanced, well drinkable Beer.

Bottle from Appellation Wines. Dark brown with a creamy head. Aromas of toffee, banana and malts. Taste follows nose with some sweetness, full body rounds out the light fruity and malty flavours.
