COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Aromas of spice (nutmeg, clove, anise) carmelized brown sugar fruits (raisin, orange, plum, banana) and a blue cheese like yeastyness. The nose is deep and alluring, strong and inviting. Some carmelly malt is present as well, but the floral spicy yeast dominates. Flavor is like the best apple cider you ever had. A woody malt start flows slowly into a rich fruity mid with carmelly finish. A delicate and incredilbe transition of flavors, like really good scotch. The spices noted in the nose intermingle with rich dark fruit malts and elegant belgian yeast in a most pleasant balancing act. You taste alchohol but its only one character in a complex mingle. Palate is equally complex and marked by smooth and definite transitions. Mild tang and tingle build to sour character while the mouth becomes increasingly silkly. After goin thro a dry phase there is a sweet whisper of a finish, slightly sticky mouth, like you just ate a nectarine. I don’t use perfect as a description very often because I want to leave the perfect beer out there as an unattainable ideal, but this beer is damn near perfect. Its because of beer like this that so many american belgian style ales fail miserably.

2010 bottle. Very balanced. Lots of tastes and aromas playing around and none ofthem coming out too strongly. Still not my favourite style even though its good.

Flaska från systembolaget - doftar jäst med en liten hint av malt. Mörk med vitt skum. Komplex maltsmak, en sötma och lite värme från alkohol, kanske något spritig.

Bottle 750ml. A bit cloudy brownish-red with quickly diminishing low beige head. Sweetish aroma, dried plum, cherry, yeasty, some spiciness, bready. Sweet cherry flavor, fruity, malty, quite spicy, light sourness, a bit alcoholic. Lively carbonation. Medium to full body. Sweet-sour aftertaste.

Good "bière trappiste", bottle of 33cl and 75cl. Okay, we’re in front of a good trappist beer, but not the best. The aroma is weaker than in other beers, the same for the palate. Nice taste of special yeast. Cheers !

750ml bottle served in its own chalice. A: Beautiful bottle art and label, first of all. Pours a nice dark amber to brown color. Cloudy and dirty with some particles floating around. Forms a big beige head. Good retention. A thin layer remains for long on the top. Lots of lacing are formed and left S: Great nose. Sweet, bready and very fruity (raisins, mainly). Notes of wood, toffee, vanilla roasted malts and brown bread. Classic Belgium yeasts. Flowery hops. A bit of alcohol in the end T: Sweet upfront. Very bready and fruity. Dark fruits, roasted malts, caramel malts. Notes of vanilla and wood. Nice hops profile. Moderate bitterness M: Heavy, creamy and molasses body. Medium to low carbonation. Bittersweet aftertaste O: Excellent drinkability. Excellent Trappist specimen. Absolutely recommended [ BA Review @ 1/12/2010 ]

Bottle. A classic, and my gateway into craft beer, enjoyed on countless occasions. Rarely disappoints. This one pours a hazy dark brown with a reddish hue. Creamy finger thick head. Tremendous and complex aroma with roasted malts and bread, as well as chocolate, kandi and then there’s the yeast with nice dark fruity whiffs. All very nicely balanced. Full creamy body, with average carbonation. Flavour is sweet with roasted malts, bread, nuts and chocolate and a long chocolate sweet finish. Delicious!

Bottle at home, 12th October 14. Pours deep Brown, aroma is slight, sugar, fruit, ok. Taste is brown sugar, toffee , slight Banana, not as intense as I expected. Overrated due to wide reach, over better Belgians, but it’s ok

Nice Fruity and roasty aromas. Some spicy notes aswell. Intense flavour (sweet and slightly bitter) and full bodied. Not very long ending. Alcohol is well integrated. Good Beligian Ale but it is not a top one

33cl bottle at home. Dark colour. White tastefully head. First impression : caramel, sweet, bubbly. Nice aftertaste!
