Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

UPDATED: JUL 11, 2011 Bottle. Poured a rich medium to dark brown with a small off-white foamy head that was fully diminishing and had fair lacing. The aroma was of roasted malts, a mild flowery hops and a light scent of a sweet yeast with notes of dried fruit. It tasted slightly bitter-sweet in the beginning with a hint of raisons and finished moderately sweet and malty and had a slight alcohol tinge at the end with the flavor only lasting a short time. Mouthfeel was medium in body and very creamy yet oily in texture. Overall a fantastic/outstanding brew with one hell of a kick. One of my favorites, but don’t drink too many!!!!!!

33 cl bottle at home. Pours a clear dark red-brown with a white head. This rapidly disappears leaving a thin film. Slight aroma of malt with some leafy hop just detectable. Pleasant taste of sweet malt with some bitterness: well balanced. Palate is on the thin side, there is a floury edge to the finish. Ending dry, but the sweetness is still there. Overall: OK, better than I remember.

Dark brown-amber color with big head. Spicy yeasts, chocolate and a bit of fruitiness. Taste is the same. Just a bit boring for a Trappist beer... Not my favourite.

Bottle. Dark Brown pour, frothy White head. Sweet Nose, sweet malty taste, with a hint of prune. Heavy body, soft carbonation.

Pour is loud and and the colour of homemade iced tea. The cap is an inch and a half of tan foam, even with the gentlest of pours, but it settles to a film pretty quickly, leaving a bit of lace. The nose on this stuff is a treasure trove. I get something new with every sniff: pungent Belgian yeast, prunes/raisins, banana, lots of spice, hazelnuts, dark caramel/toffee, a hint of something floral. Taste is a slightly sweet malt with caramel and hazelnuts, ripe banana. The booze is virtually invisible until the finish, where it starts to give off this pleasant, lingering warmth. This is remarkably drinkable for 9%, and while it’s not dry per se it’s remarkably well-balanced. And I just downed it in ten minutes, on an empty stomach, so there goes my night. Cheers!

Bottle thanks to Jaco. Pours a beautiful dark brown with large cream head that eventually recedes to a thin layer that persists. Not much aroma, slightly fruity. Taste of coffee and dark fruit, very drinkable for a 9% beer, a very smooth alcohol flavour. Really nice.

0,75l bottle from Erzbierschof. Pours brownish with a lively foam that quickly dies. I enjoyed this beer and there’s clearly nothing wrong with it, but I find it a bit boring.

Degu @erzbierschof. Nicht schlecht, wenig CO2. Sehr viel Caramell. Rund und harmonisch, aber keine Ecken und Kanten. Langweilig.

Delicious. Pours dark hazy brown with thick beige head. Smells sweet and of Belgian yeast. Tastes of dark fruit, slightly bitter with sweet malty notes and some hint of banana and bubble gum. Primo

APPEARANCE - Dark brown, with a 4-finger head that dissipates slowly. Not much lacing. AROMA/SCENT - Nutty, sweet. TASTE - Fresh, sweet, nutty. MOUTHFEEL/PALATE/TEXTURE - Good carbonation, smooth. VALUE - $8 for 11 oz. bottle - low price for an import at a restaurant. OVERALL/DRINKABILITY - Good drinking beer. Not overly boozy.
