Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Poured from an 11.2 oz bottle into a Trappist Glass. Slightly cloudy, but a beautiful deep brown. A one inch tan head quickly rises and slowly settles to a thin film that coats the sides of the glass. Aroma of fruits, vanilla and caramel. Medium sweet, medium body, and lively, though not fizzy like some other Belgians. While I have enjoyed this beer and would certainly look forward to it again, I found myself hoping for something more complex. As it warms its characteristics seem to be more pronounced, but still a bit one dimensional.

Mørk brun med et off white skum, skummet la seg raskt som en tynn ring. Aroma av malt, sukker, moden frukt og gjær. Smaken følger aroma, men her er det plomme og aprikos som utmerker seg. Alkoholen er meget godt gjemt.

Dark brown color and rich head. Aroma has yeast, malt, plums and a bit sourness. Complex taste with elements of coffee, chocolate, raisins, roasted malt. First feeling is sweet but in the end there is a good sour aftertaste. Excellent one.

Bottle from Cedric’s tavern. Pours dark, dark brown with a khaki head. Doesn’t leave a lot of lacing in the glass. Has a big molasses and Belgian yeast thing on the nose. Lots of brown sugar and dark fruits on the tongue. Hides it’s alcohol well. Nice.

Bottle @ home. Pours with a dark red, almost brown colour, big long lasting white frothy head. Aroma is medium to heavy malty, with notes of fruit and chocolate, softly hoppy, medium yeasty. Taste is medium to heavy sweet, softly bitter, softly sour, very softly salty. Medium to heavy body, creamy texture, soft carbonation.

Bottle to a Chimay glass. Aroma is sweet, light, yeasty. Pours a slighty hazy reddish-brown with minimal head. Taste is moderate deep fruit. Slight malt. Yeast in moderate doses. Medium thin mouthfeel. I believe I have liked this beer a lot more in the past. Pretty uninspiring here. Looking forward to trying it in Belgium in two months and may re-rate.

Bottle. Brown colour with ruby reflects. Dried plums, yeast, cherries, caramel in aroma. Taste: malty sweetness, caramel, chocolate, raisins. Some floral hints also. Pleasant warming after every sip. Brilliant.

Poured from 330mL bottle [best before end 2015]. Cloudy, copper brown with dissipating fizzy beige head, a bit of sediment at the bottom. Aroma of dark red fruit, raisin, caramel and toffee. Flavour comes through, but a little muted, minor alcohol taste, a little flat.
