COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles.
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Aroma of figs, cherries, and slight wafts of alcohol. Pours deep brown with a big flume of a head. Tastes of dark fruits, slight cloves and sweet caramel. Well balanced and delicious.

This is a yeast driven malty beer. It went very well with our Thanksgiving dinner. A solid beer, worth revisiting from time to time.

Location: 11.2 oz bottle from Costco, 11/21/11

Aroma: It is fairly complex, a nice mix of raisins, other dark fruits, Belgian yeast, and sweet malts
Appearance: This one pours a dark, cloudy brownish color with a large tan head and minimal lace
Flavor: The taste is medium (plus) sweet, dark malts and fruit, components similar to the nose
Palate: The body of this one is medium-full, it has a pretty nice mouthfeel, and drinks rather easily
Overall Impression: Just to be a little different, I thought I’d wait until I got to almost 2K ratings to add Chimay Blue. Honestly though, I just haven’t really taken the time to write a proper rating until now. It is a really good beer. I know it gets knocked down a bit because you can buy it everywhere, but that doesn’t stop it from being really good.

Mmmm. Near perfection. Full bodied and rich but with a lightness and carbonation unique to the strong ales. Sweet and flowery at the end. First had this in Baton Rouge with my parents on a research trip in 2005.

Had this many times at the import beer bar, The Brussels in Kanda, Tokyo. Rich, smooth, flowery and fruity-dark fruits and sugars, strong yeast and malt, big body and big head, thick lacing, high sugar content and lots of glycerin.
