Poured mostly translucent gold with a big head. Lots of coriander is present in the aroma along with some malt and the typical Chimay esters. Very similar aroma to a wit bier. Flavor is very nice and light featuring coriander and cereal malts, along with some fruitiness. Light bubbly mouthfeel. Very refreshing.

UPDATED: MAR 8, 2011 330 ml bottle. Re-rating. Hazy orange body with a white head. Mild and spicy aroma with hint of fruit and yeast. Flavor is mild fruity, hint of honey, caramel and spicy yeast. Not much bitter. A bit interesting at first sip, but a lot of the flavors disappears fast and turns out more plain. Almost dry finish.

Bottle in a trade with Engelsman. Bonus. Took me 2 years to drink this- kind of forgot about this one. Might have been past its prime. Pours a deep gold almost copperish with some slight haze and nice white head. Aroma is cereal, grains, lemony sweet tarts, light oxidation with some doughy malts and light catpiss with grassy notes. Flavor is cereal, corn, light DMS, some acetaldehyde greenness, and sugary artifisial sweetness with some light papery oxidation again- yeasty phenols as it wwarms. Still a good body and smooth. Surprisingly still drinkable. Ok.

Tasting@beermouth. Thanks a lot Yespr. Pours muddy copper with a off white head. Aroma of yeast - quite nice & classic chimay like. Bready, malty, sugary & yeasty taste -quite thin and weak compared to aroma. But thats natural since the abv is kept so low. Very happy for being able to taste this rare brew. Thanks again Yespr!.

Bottle. Clear medium amber color with a average to large, frothy, good lacing, fully lasting, off-white head. Aroma is moderate malty, toasted, moderate hoppy, grass, flowers, citrus lemon / orange, fruity. Flavor is moderate to light heavy sweet and moderate bitter with a average duration. Body is medium, texture is oily / creamy, carbonation is soft. ;o)) (121207)

Bottle at Kulminator. Very pale golden beer with a thick sticky tan head. Aroma is incredibly fruity, pears, apples and plus all coated in honey. A bit of nutty/earthy character. Fairly assertive tropical notes as well. Flavour is okay, but it doesn’t really deliver on the initial promise. Some honeyed notes, and a touch of tropical mango, but there is also a metallic note that I don’t care for. This dissipates quite a bit eventually, which helps immensely. Wheaty spice on the finish but has an unusual floury quality to it. It’s quite good, particularly the aroma, but it could be better.

Bottle. Hazy amber with a thin but long-lasting white head. Yeasty, spicy and citric fruity aroma with oranges in the frontline. Quite light in body with a nice prickling carbonation. Very dry with some acidity. Highly drinkable but bland for a Chimay.

UPDATED: JAN 31, 2009 Bottle outside the abbey. Hazy gold color with a nice white head. Good lacing. Very light with an easy drinking palate. Citrus and yeast flavors? Recommend getting the sampler tray that includes doree and all the abbey cheeses.
