Bottle from Systembolaget. Pours hazy and pale, with a froth head that quickly settles to a thin layer. It’s not a looker - it looks terribly thin. Those poor monks had to do with the second or third runnings... It looks like a wheat beer but the thin head tells the truth that there is none or very little wheat in the malt bill. The aroma is more promising. The chimay yeast comes through in a way we don’t feel it do in the other beers, where it is hidden behind more flavorfull malts. It’s sweet and citrusy, maybe some butterscotch hints too. Very entising. However, the flavor lets the beer down. It is thin. The pilsner malt cannot carry the taste alone and the hops comes in to play first string. In the back of the mouth some of the citrus is still there but is a refreshing beer at best. Just not enough flavour. High effervecence and light mouthfeel puts the closing chapter on a negative note. I understand why it was a beer for the monks only.

Bottle from Dranken Geers. Pale cloudy amber with a thick very light foamy head. Nose is very aromatic and perfumed. At first it feels a bit too much. Kind of washing up liquid. But it grows on me. Lemon citrous, lemon sherbert, fragrant floral, rose water, some light spice, fresh coriander. Really fragrant. Taste is so frangrant and floral it’s almost a bit soapy but in a nice way. Rose water, lemon rind, apricot, floral. Body is light and delicate, little foamy. Goes really well with spicy food.

Bottled, 0.33 l. Cloudy yellow one with a broad pored white head on it. Citrus fruity nose. Aroma brings lemon, bread and herbs, mouthfeel is nicely slick. Refreshing, lemony-spicy finish.

Bottle at Sir Williams ljubljana . My 200th Belgian rating. Glad I got to try this. I was just in Belgium and didn’t recall seeing it anywhere but Slovenia is close to Italy so I guess that is how they (Sir Williams ) got it. Pretty standard swert yeast Belgian elements to this.
