Bottle from Systembolaget. Pours hazy and pale, with a froth head that quickly settles to a thin layer. It’s not a looker - it looks terribly thin. Those poor monks had to do with the second or third runnings... It looks like a wheat beer but the thin head tells the truth that there is none or very little wheat in the malt bill. The aroma is more promising. The chimay yeast comes through in a way we don’t feel it do in the other beers, where it is hidden behind more flavorfull malts. It’s sweet and citrusy, maybe some butterscotch hints too. Very entising. However, the flavor lets the beer down. It is thin. The pilsner malt cannot carry the taste alone and the hops comes in to play first string. In the back of the mouth some of the citrus is still there but is a refreshing beer at best. Just not enough flavour. High effervecence and light mouthfeel puts the closing chapter on a negative note. I understand why it was a beer for the monks only.

Bottle from Desmond’s Next Door, Kimmage, Dublin [130714]
Light blonde, slight haze, frothy white head
Aroma - aromatic, perfumy, floral, soft spicy, soft orange
Taste of soft yeast esters, soft spicy, light orange, floral, light sweet pale malts, flavour is delicate but what’s there is good
Palate - medium carb, very thin watery body, soft sweet. Finish as main flavour.
Overall - Nice and refreshing, flavour is light with a watery texture. Unlike the other Chimay beers. Comes across as a table beer.

Pours a cloudy yellow with a medium white head. A very spicy aroma of hops and yeast. The flavor is very smooth; banana esters, loads of yeast, very spicy. Fresh and nice

330ml bottle from Archive Beer Boutique. Rating from February 2914. Lower alcohol content for a belgian ale but this doesn’t detract from the beer.

Bottle at the Brouwcafe, Schevenigen. Poured a hazy straw colour with a long-lasting frothy white head. The aroma is light yeast. The flavour is medium bitter with a yeast, malt, hop bitter palate and a lingering bitter finish. Medium bodied with average carbonation. So this is what the monks get to drink. They won’t be too disappointed but it’s not quite enough to make me join the monastery!

---Rated via Beer Buddy for iPhone

Bottled. Warm and hazy orange color with thick off-white head. Fruity wine-like nose. Aroma is fruity wine and subdued sweet fruits. Flavour is nutty, sweet malts and fruity. Loosens up by the end, kinda thin for its kind.

Tap at in de Wildeman, Amsterdam: Hazy golden colored brew with an slightly sweet bitter taste. All components of the classic heavier Chimay are here, only much weaker in taste.

Discreta patersbier, cioè birra prodotta solo per l’uso interno del monastero. Questa birra è stata da poco messa anche in commercio. Buon bilanciamento dolce/amaro, lievemente speziata. In bocca risulta secca, asciutta e ben rinfrescante.
