Bottle from Systembolaget. Pours hazy and pale, with a froth head that quickly settles to a thin layer. It’s not a looker - it looks terribly thin. Those poor monks had to do with the second or third runnings... It looks like a wheat beer but the thin head tells the truth that there is none or very little wheat in the malt bill. The aroma is more promising. The chimay yeast comes through in a way we don’t feel it do in the other beers, where it is hidden behind more flavorfull malts. It’s sweet and citrusy, maybe some butterscotch hints too. Very entising. However, the flavor lets the beer down. It is thin. The pilsner malt cannot carry the taste alone and the hops comes in to play first string. In the back of the mouth some of the citrus is still there but is a refreshing beer at best. Just not enough flavour. High effervecence and light mouthfeel puts the closing chapter on a negative note. I understand why it was a beer for the monks only.

Bottle. Cloudy, pale golden color, white head. Bright, spicy aroma with lemon and toast. Toast and yeast in the flavor, but the balance is good. Dry, chalky finish. Medium body, high carbonation. This reminds me very much of Duvel, but is far more easy-going due to the lower ABV. Nice.

UPDATED: DEC 26, 2014 Bottle 33cl. as Chimay Dorée/Goud. Cloudy pale golden color, good frothy white head, recedes slowly to a thick layer, light lacing; fresh wheaty aroma, banana, apricot, lemon peel, yeast, dough; taste medium sweet, light bitter, hint of sourness, grainy, bit peppery on the tongue; medium body, oily to light creamy texture, average carbonation, aftertaste mild bitter, light sweet, cereals, coriander and lemon grass notes; overall a pleasant and unpretentious session beer.

UPDATED: DEC 20, 2014 On the Fifth Day of Christmas 2014 the beer gods gave to me . . . a Chimay I have never had before? Not possible. Session Chimay? Ok. Pours a pale golden color with white foam head. Aroma of caramel, zest, earthiness, Belgian spices, slight bread and banana. Very light, frothy sweet caramel with zest and slight hop hit with banana, citrus and spice on backend. Perhaps a pinch of pepper. You have to let it sink in to appreciate. You think Chimay and the mouthfeel disappoints. But when you consider the flavor complexity in a session brew, a sessionable Belgian? Genius.

Bottle from Capitol Beer in Sacramento, CA. Pours light gold with an active white head. Aroma of grains and spice. Med + body, at least. Flavor is "grain", yeast and mild spices. Flavor is mild, but distinctive. Actually making me think of some sort of TexMex tortilla or chip. Liking it.

Pours cloudy gold, light white head. Aroma is sour grain, slight banana, not getting a lot of herbs but maybe grass? Taste is light malt, banana, citrus, slightly sour or carbonated acid. Mouthfeel is light and fizzy. Reminds me of a saison almost. Okay, but dissimilar than the other beers from the brewery. ---Rated via Beer Buddy for iPhone

Bottle from Capitol Beer & Tap Room. Pours murky golden with a foamy white head and a yeasty banana aroma. There is a thin pale malt flavor with some fruity esters and a mild spice finish. A pretty good Belgian session ale, though not readily available.

Bottle. Slight gusher, massive white head, hazy light golden beer. Some butter and milk up front, with dough, lots of spicy yeast, some banana and very nice complex herbal qualities that I can't really place. Medium bodied. Nice stuff, except the opening of the bottle and the first sip I quite enjoyed it.

330 ml bottle from Liquor Mountain in Kyoto. Hazy yellow with off-white head. Aromas of orange citrus fruit and peel, herbs, lemons. Tastes of herbs, spice, orange citrus fruit and peel, light yeast. Medium body with a dry finish. Refreshing beer.

330 ml bottle. Hazy honey gold color. Small creamy white head. Faint yeasty malt nose. Dry citrusy malt flavor. Hints of lemon peel and cloves. Very light body and overall flavor. Dry mid taste with notes of cardamom and biscuit malt. Clean and crisp with a long dry finish. Pleasant, but I prefer the the other standards of Chimay.
