COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Browish red body, tiny and bubbly head. Caramel, raisins, coriander seeds and early. Sweet body that sticks to the mouth, even with the watery texture. Long aftertaste and alcohol is well hidden. This is the opposite of refreshing and although well brewed I never got to like it really. Cheap. (33cl bottle, 1,60 EUR)

Hazy light brown color with a pillowy head that hangs around for a bit. The flavor features big, full malt, a hint of hops to cut through the sweetness, and some apricot in the finish. Starts creamy and ends dry. Very interesting sensation. As it warms, I’m getting butterscotch and some pepper. Overall, a sensational beer. Big flavors, great texture, complex, and balanced.

UPDATED: MAY 28, 2012 330ml bottle. Pours a brown colour with a thick, light tan head. Aroma of Belgian candi sugar, caramel, treacle, yeast and light black pepper. Nice flavour of Belgian candy sugar, treacle, caramel and yeast again. Little fruitiness with blueberry and raisin notes. Foamy mouth-feel and a spicy, peppery linger. Nice. Also had this on draught at Delirium Monasterium. Pours a dark red colour with a fair beige head. Aroma of biscuity malt, candy sugar and alcohol. Similar flavours with mild bitterness. Moderate carbonation and a foamy mouth-feel. Alcohol is well balanced.

Bière de couleur rouge cuivrée, avec un de ces cols qu’il faut laisser le temps qu’il se dissipe un peu avant de finir de la verser. Elle contient des odeurs évidentes de levure et d’alcool accompagnées de prunes séchées. La palette de goût ressemble énormément aux odeurs, en plus du pain grillé avec une belle amertume, le tout bien équilibré.

fruits, malt, bronze color, fizzy, medium body, Bottled. Little bit different of the blue one. More fruits, more sugar. Easier but a bit less complex. But whatever, a very good beer.

First experience of Chimay beer - a few months ago. I’ll let the description say it all as I’m not good with beer descriptions! A wonderful tasting beer, apricot aroma, copper with a white head. Simply superb.

Pours a reddish amber, white foamy head. Spicy aroma, coriander, black pepper, wild cheesy yeast aroma. Crisp sweetness. Full bodied, oily, lively carbonation, long chewy finish.

Bottle @ taste 10 cl. Dark brown with a reddish tint with a medium off white head. Aroma of dark fruit, malt and yeast. The taste is slightly fruity with notes of banana
