COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Bottle @ home. Pours dark amber with a creamy offwhite head. Aroma of sweet malt, caramel, sweets, dark fruit, prunes. Taste ismalt, light yeast, sweet caramel, sweet dark fruit. Medium body, soft carbonation. 300412

This is one beer I can’t quite figure out. Quite a complex taste. Slight fruity hints (I taste grapes). The color, at least to me, looks like spoiled red wine, but don’t be fooled. It’s a good beer.

750 mL bottle. Great nose of prunes, yeast and roasted grains. Pours a really nice mahogany color, decidedly not filtered, slightly off white head, no lacing. Sweet, but not cloying, a nice balance of both sour fermented flavor and bitter hops, surprisingly refreshing and easy to drink for such a big beer. Nice and full bodied, creamy texture offset by medium to high carbonation. A serious beer, really love the fermented aroma and flavor it brings to the table.

750ml bottle. Careful removing the cork! Someone could lose an eye! Poured into chalice (as recommended). Thick, murky orange (Lovibond 16) with generous, cream colored head. Becomes a fairly ample lace for the duration of the beer. Rich notes of sweet, sticky, butterscotch waft up from the brew. Quite a sweet tasting beer! Not bad, although I expected more balance against the caramel taste (I can barely distinguish any hops flavour). Lively carbonation and oily mouth feel. Has a longer finish too, somewhat chalky and metallic.

25.4 oz bottle. Pours a coppery color with gigantic cream-colored head. Very fizzy. Strong aroma of apricot. Slightly bitter flavor with strong fruity notes. Long smooth finish. This is pretty good.

April 21 2012. 750ml bottle poured (several times) into my Stella Artois glass. Aroma is caramelized apricots and apples. Apricot in colour at clearest areas of opaqueness around edge and thick chestnut brown solid in centre. 2" thick soapy tan head full of bubbles settles into a mirangue then slight ring of bubbles in minutes. Lacing is a desperate clinging of carbonation. First taste is caramel and apricot sweetness followed by a sour granny smith bite and alcohol metallic finish. A little harsh at first. Advantage of having large bottle is that once it sits for a minute, the flavour balances out and it tastes more familiar. Definitely unique. Palate is sticky and lingering. Poor ending to a good beer.
