Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

medium and sweetish aroma - fermented fruits, overripe peach/apricot, flowers, honey, honeycomb. medium and very fruity taste - overripe and juicy peach, honey, lot of flowers, springlike herbs, some cherries with alcohol, some corn juice with hop bitterness. good!

Pours clear deep amber with a huge beige head. Nose of spice, smoke, toast, yeast, caramel. Medium sweet with some light sourness to back it up, very light spicy bitterness on finish. High carbonation, medium body, a bit of alcoholic warmth on finish, some stickiness. A lovely dubbel, but there are better ones.

AppearancePours a murky orange brown, even though it had been sitting in the fridge for a month, with a thin, bubbly and weak off-white head that disappears quickly
Aroma Cooked vegetables, bread, liquorice, medicinal herbs, alcohol, acetone
Taste Very sweet, no bitterness.
Palate Watery, thin and fizzy.

From a small bottle into a Rodenbach Grand Cru stem glass. Pours brown with significant head and lace. Aroma of grains and roasty malts. Significant carbonation and mouthfeel. Flavors of rich malts, grains, minerals, caramel, tropical fruit rind, powder sugar, Overall rich, flavorful...not my favorite Chimay fresh or aged, but respectable.

Have tasted this one many times before, but surprisingly never rated it. Pours caramel colored with abundant creamy foam. It is indeed a Chimay, with aromas of caramel, toffee and butterscotch and a first taste brings them to the front. It is a mouthful, creamy and rich, thick like an ice cream soda. This is a great beer.

UPDATED: AUG 25, 2016 Pours clear mahogany with a large beige head. Smells of dark fruits and caramel. Taste is sweet fruits, hints of caramel. Medium-bodied with a smooth texture and lively mouth-carbonation, Chimay Rouge (Première) finishes with a bready yeastiness.
