COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

My ol’lady turned me on to this beer. I like it so much I have brewed two batches in an atempt to duplicate it. Love the fruitiness of the belgian yeasts. Not at all a hoppy beer. At $12 a bottle, not a session beer.

Hazy reddish brown. Yeasty-spicy-sweet aroma. Taste is crisp maltiness with powerful caramel and yeast. Some spice and fruit in the background, hops in the finish along with some dryness. Medium body, creamy mouthfeel, prickly carbonation.

Bottle 330ml Pouring: Jumps out of the bottle. White foaming head (brown). Big sized bubbles. low lacing. Aromas of malt. Taste of malt, sligth bitterness from the hops. Not bad, nice balance. A little watery for me, but refreshing.

Pours a slightly thick caramel color with nice sediment. Dried apples and caramel on the nose. More of the same on the palate with full mouthfeel and smooth finish. Very enjoyable beer.

Bottles pours a deep hazy amber red. 2 finger off white head that dissipates rather quickly. Fruity yeast aromas is apparent - think citrus and apricots. Moderate carbonation. Initially bitter, almost harsh but subsequent malt sweetness spreads. Tastes of dark fruits like grapes and berries with some zest. Full bodied with a mildly sweet, clean finish. Nice balance of fruity sweetness and bitter hops.

Bottle. Pours dark amber with with a substantial head. Fruity yeast aroma. Flavour is candy fruitbalanced with hop bitterness. Clean finish. A quality brew.

Foam one finger finger head. Hazy brown color mild spice apricot nose. Sour middle with a mild bitter start. Clean finish. Hints of fruitiness and highly carbonated. Has a zesty tantalizing sensation on your tongue. A true joy to be savored. Well balanced brew.
