Pours amber with a medim head with some decent retention and lacing. Malt and spice with light hop nose. Flavor is the caramel malt and some fruit/ golden raisin and apricot. Very drinkable.

Poured from bottle into a Chimay chalice glass
Appearance – The beer pours a hazy copper-garnet color with a small tan colored head. The head fades rather fast leaving only a trace level of lace on the sides of the glass.
Smell – The aroma is fruity with nice smells of darker fruits. The fruits are mainly of a resin, plum and prune. Mixed with the darker fruit smells are some nice yeasty smells as well as some spice aromas. Rounding out the aroma is wheat bread and a banana smell giving it an overall dark Belgian aroma overall.
Taste – The taste begins with darker fruit and a slightly biscuit flavor. The darker fruit are just as would have been expected from the nose being mostly of raisin and plum. Right up front there is a moderately spicy taste of nutmeg, clove and cinnamon which is quickly meet with some caramel and banana sweetness. Toward the middle some yeasty taste begin coming to the tongue while some of the biscuit disappearing. Toward the end, a tiny bit of alcohol comes to the tongue as well as a moderately strong molasses sweetness which when combined with all the rest, leaves a nice somewhat sweeter and warming taste to linger on the tongue.
Mouthfeel – The body of the beer is medium in its thickness and creaminess with lots of carbonation bubbles filling the body of the brew. The moderate body and carbonation make for a more crisp feel balancing out the sweetness of darker fruits and sugary tastes well.
Overall – Fantastically tasty and quite a pleasant drinking brew. This is renowned for a reason.

Burgundy, off white head, decent head retention, and lacing. Floral, fruity, mild raisin, and mild lemon aroma. Full bodied, mild syrup, medium lemon hop notes, earthy, and sweet fruit notes. Decent balance with watery, lingering bitterness.

Chestnut brown colour, creamy beige head that nicely lasts. Sweet malted aroma (light) and taste with peach, cherry, caramel/toffee, raisins, vanilla, light chocolate. Good alcoholic warmth. Soft but quite complex mouthfeel with prickling carbonation and rounded flavours, good body.

Bottle at Wellington Arms, Bedford. Mid-brown, hazy, bit of cream head. Malty, doughy aroma with a hint of berries. Malty caramel taste: my God this tastes English! Lovely tingly carbonated palette. While not a patch on its older brothers, this is a solid beer.

75 cl. champagne-flaske. 7 % . Den røde Chimay er bare ustyrlig fantastisk god. Til den mørke sige, suveræn smag uden den mindste bitterhed.

Pours a dark, hazy russet color with an off-white persistent head. Smells vinous, w/ Christmas cake spice and stewed raisins, a little sassafras or cherry tree root. Perfect amount of carbonation. Thick, balanced malty midddle, w/ a yeasty, drier finish. Overall, a classic in the Abbey Dubbel style.

Look: hazy amber-brown, big beige frothy head.
Aroma: harsh phenolic spice, a littler alcoholic even, some dried fruit.
Taste: quite flat, phenolic, harsh phenolic bitterness. Had this beer, before and was not impressed, but this time it was like a bad homebrew.

Aroma frutado e caramelado. Coloração vermelha acobreada e translúcida, com boa carbonatação e alta formação de espuma (boa retenção da mesma). Sabor frutado, levemente amargo. Retrogosto levemente amargo e frutado. Ótima opção se dubel.

One of the three Chimay classics, the ’smallest’ one in terms of ABV and popularity, also tasted as Chimay Première on 75 cl. Creamy, very pale beige, equal, moussy head, very stable, colour a warm and ’autumn-like’, brownish copper with orange hue, darkish but fully transparent, clear at first with a steady column of fine bubbles moving upward, hazy after adding deposit. Subduedly sweetish, appetizing aroma of candi sugar, fondant chocolate, orange, walnuts, faint and elegant wheat sourishness, gingerbread, nutmeg, gin, grapefruit peel and white pepper. Soft, well-rounded, full palate with sharpish carbo, dried fruits, citrus peel, restrained sweetness, caramel, soft sourish wheat presence, bit granular and a little bit oily, smooth mouthfeel, nutty maltiness hovering between dry and sweet, finish reveals leafy and somewhat peppery hop bitterness, tingling carbonation also continues, slick, some warming, gin-like alcohol, dry and even a little astringent on the tongue. My least favorite of the three but still a very enjoyable, elegant and inviting beer, less complex, leaner and more bitter than the big blue one. Ages very well in the Première version though, but even then it cannot compete with the Grand Réserve.
