COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

33cl bottle. It has light brown colour and huge foam what disappear quickly. Taste is quite simple as sweet malt and earthy hop dominate. You can feel caramel feeling at the end of gulps.

330 ml bottle from Sobeys Liquor, served in a tulip glass. Chimay is the one name that comes up most often when you mention Trappist ale, or so it seems. Pours a nearly opaque pumpkin-orangey brown, with a couple of visible, fine streaks of carbonation and a milky head that goes from creamy to pearly and leaves spots of lace in its wake. Aroma delivers a payload of bready malt with hints of caramel, while the hops bring deep red, winey fruits and an undercurrent of dusty herbalness. Flavor is gentle overall, focusing on its fruity, grapey, lightly sweet, vinous character on top of its toasted malts, with a touch of carbonic bite and alcohol warmth. A bit chewy with a slightly lingering finish. Subtly flavorful when it comes to its winey facets, never entering a distasteful malt liquor territory. Still, this beer puzzles me. I had expected explosions of thick malt and flurries of hops akin to Duvel Tripel Hop, but it was all a restrained, yet likeable, knock on the doors of my tastebuds. Puzzling.

Bottle bought at Delhaize. Pours red/brown with a medium white head. Taste is watery with caramel notes, hoppy bitterness in the back of my throath, roasted malts, little sweetness, abricots.

Btl pours a hazy light brown-red color. Big off white head, with big bubbles that fades fast leaving no lace. Aromas of fruits:prunes, old plums, banana, and a hint of citrus. The smell of caramel, alcohol and fresh baked muffins hit the nose. Tastes of fruit, figs, sweet caramel, earth, yeast and dark bread. Medium body, lively cabination, soft mouthfeel and a sweet yet slightly alcoholic finish. Very good beer,it has a nice malty character that is rich and bold. It has an effervescence about it that makes it very drinkable. I like this beer it is fantastic!

From 75cl, corked/caged, has about 4 inches of headspace in bottle, poured into 16oz Belgian tulip glass

Aroma: sweet fruity, malty

Appearance: amber, clear, massive tan head with good retention

Taste: Medium sweet

Palate: medium body, creamy or sticky texture, lively carbonation, short sweet dry finish

Overall: I’m not a big fan of Dubbels, but this one is exceptional. The aroma has lots of fruity like smells. At first, I thought it was cherries, but after reading the description saying apricots then I’d assume that’s more accurate. The color and body is nice. The taste is malty, smooth, sweet, creamy, and well balanced. If I had to choose one Dubbel, this would be it. Fantastic beer.
