COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

330ml Bottle at Home 15/05/2010 Fruit and malt aromas. Carbonation. Small white head. Amber coloured strong in alcohol and a little sweet on the palate with a candy sugar flavour. A little dryness in a lasting malt finish.

pours a light tan head with cloudy brown color. Aroma is medium malt, muted fruit. Taste is upfront effervescence, medium malt, muted fruit, astringent, a flatness at the finish.

Big bottle. Nice red-brown colur with a big fluffy tan head. Aroma of malt indeed, sweet with a good fruitiness. The flavour has roasted malts, dark fruits, caramel, some alcohol. Long somewhat bitter aftertaste.

Hazy red-brown colour with okay off-white head. Very mild aromas of fruit and caramel. It is a bit vinious, based on caramel and with undertones of sweet red berries. A mild hoppy finish.

probably the most rated beer that i haven’t rated already. I haven’t really been able to dig the blue, so this might be interesting. red/amber/brownish with a big smooth thick offwhite head. aroma is a subdued dark fruits, caramel, faint toffee. flavor is extremely balanced and complex, comes off as chocolate cake with cinnamon, with cocoa on top, in other words, spicces, chocolate, cocoa, sweet malts, very faint dark fruits. i don’t like chocolate cake with coacoa on top, and am not a fan of cinnamon, so this one gets a low rate. even though it tastes rater bad, it is easy to register that it is a very well crafted beer.

This bottle was in Marts 05, when I tasted it, out of date by the end of 07, so it was pretty young. It has a nice, creamy head, a beautiful mahogany color and a fruity aroma. The mouthfeel is semi-oily and the flavour is sweet and has the characteristic Chimay taste and notes of fruit. The bitterness is light, but OK and the alcohol is still too dominant in this young beer.

Ruby with medium lasting cream white head. Fruity malt and yeast aroma. Sweet malty flavour with all the yeast notes and the slightest hint of bitterness.

Bottle. Nice big lasting tan head. Color is brown. Aroma is sweet and lots of spices. Taste is spices and sweetness as well. Good mouthfeel.

Full bodied. Malty, some fruitiness (apple, blackcurrant). Bitter finish. Very well brewed and delicious beer, but lacks in taste and complexity compared to a Rochefort.
