COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Big beige head, cloudy amber color. Scent is dark and fruity. Fruity, a bit hoppy and good. Worth enjoying.

Bottle. Color: Taste: Medium sweet. Lightly roasted malts, little sweetness. Hints of red fruit, chocolate and plums. Bitter earthy finish.

Aged bottle. Not sure how long but at least 3 years. Some oxidation is present in aroma (wet cardboard) and a bit in the flavor but still drinkable. Probably past its best. Taste is of caramelly malts, brown sugar and dark fruity esters. Body has thinned out a bit and carbonation is low for a Belgian of this style. But bitterness and expected astringency is right on and there is no harshness present. In appearance the only thing different is the thinner and rapidly dissipating off white head.

Belle robe marron clair avec mousse peu persistante. Arômes subtiles de prunes et fruits secs.....La saveur est très équilibrée entre l’amertume,l’acidité et la douceur que cette Chimay laisse en arrière bouche. Excellente bière trappiste!

Goûtée dans un verre neutre "tulipe". Robe brune avec une belle mousse persistante. Le nez est sur les fruits secs et la prune. Le goût est à la hauteur avec une balance idéale entre douceur/amertume/acidité et des saveurs légèrement épicées. La finale est longue et renforce l’impression d’harmonie. Une grande bière trappiste. 16.5/20

Color marrón medianamente claro, turbio, con capa de espuma de un blanco amarronado de dos dedos de grosor (buena retención). Carbonatación presente, sin pasarse. Aroma frutal e incluso floral, muy fresco. Invita a meter la nariz una y otra vez en la copa. El sabor viene de la malta (no capto nada de lúpulo), incluso se percibe muy mínimamente un regusto a tostado. Afrutada. Toque mínimo de amargor (el justo para que la cerveza no pueda ser denominada como dulce). La carbonatación en boca es muy placentera. Otro acierto de Chimay.

The aroma of yeast, Mazarin, grass and dried fruit. The taste is alcohol, yeast, dried fruit and lightly fruity. Very carbonic acid. My favourite Belgian - this beer never disappoints. Beautiful copper colour and creamy head gives off light fruit notes with a promise of something almost plumb-like underneath. The taste is complex but finishes clean.

Deep cloudy brown color with an amber hue, and a powerful amount of activity. Slightly creamy and frothy beige 3 finger head, lasting around 15 minutes, making a good amount of legs. Flavors of ester fruits like pears and apples, dark fruits like plums, yeasty, coriander, clove, molassy, caramel, floral and herbal spices. Smooth slick medium body with champagne like carbonation. Strong and long finish, ending with a faint smoky molassy feel, thick fruity and bitter yeasty tongue coat, with lingering oaky barrel aged and grassy feel. Overall this is a very good craft with tasty flavors and a quality finish that I find better and more complex than the other Chimays. Good freshness and a well balanced rich sugary taste, yet quite dry and bitter with a strong boozy vinous feel.
