Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Bottle pours a hazy copper-brown with a thick off-white head. Frothy with decent retention and lacing. Aromas of dark fruit, Belgian yeast, pepper, and apple. Flavor is smooth, fruity, some caramel and just a hint of hops. Tasty, but not as outstanding as other Chimay brews.

750ml bottle. Pours a dark copper colour with tan head which is retained for some time. Aromas of spices and caramel malt. Sweet aftertaste. A fine Belgian beer.

A fine bottle given to me by a friend from work after the completion of a month-long painful task, thanks Matt! Enjoyed at 8:58AM. Pour is cloudy, murky brown with a thin ring of beige foam - looks like water from the Wisconsin river. Aroma is loaded with banana bread, light holiday spice, caramel malt, and a light metallic note. Flavor is lightly sweet and minerally with light toasted malt up front followed by a dry yeasty kick then finished with banana and Belgian yeast flavors. Wonderful refreshingly effervescent palate.

Kolor brunatny, zmetnione. Piana niska, powoli opada do grubej obraczki i minimalnie oblepia szklo. W aromacie ciezko sie czegos doszukac, lekki syrop kandyzowany i suszone owoce, ogolnie slodki aromat. W smaku jeszcze ciezej sie czegos doszukac, jest smak syropu kandyzowanego i lekka owocowosc, na finiszu pojawia sie delikatny, szczypiacy alkohol. W odczuciu wytrawne, wysoko wysycone, ale jest to jak najbardziej na miejscu. W zasadzie jest pijalne, ale jest tak do bolu nudne, jednowymiarowe i malo intensywne, ze jest sporym zawodem.

0,33 l bottle. Clear, dark ruby with nice off-white, creamy and stable head. Fruity aroma of cherry, plum and raisins. Not as intense as I expected (and quite weak compared to a Rochefort 8). Taste follows the aroma but adds some alcoholic notes and some bitterness. Creamy mouthfeel, medium body, lively carbonation. Definitely a good beer but somehow I missed some deepness and complexity. Interesting at least that hop extracts are used.

750ml bottle from the LCBO. Deep brown/ruby red body overtop a huge foamy head which diminished quickly leaving almost no lacing. Huge apricot notes, some wine-like qualities on the nose alongside cherry, apple and plum. The finish is more alcohol warmth than hops. Medium bodied with elevated alcohol which is well integrated. More sessionable than most of the same style.

750ml bottle. Cloudy dark red copper body, big mocha head with decent retention, but watery lacing. Aroma of Belgian yeast and spices, candy sugar, caramel malt, a tad mineral. Smooth and light taste: yeast, candy sugar, lots of caramel malts, herbs. A strange metallic aftertaste.
