Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Pours copper and hazy with a big, tan head that dissipates slowly into a cap. Toffee is the aroma that stands out, but there is also molasses, butterscotch, cranberries, raisins, and plum. Taste is real sweet, and it drinks much bigger than 7% would indicate. Thick and syrupy mouthfeel, and leaves a strong toffee aftertaste that lingers for a good while. I’m not a big fan of Dubbels, but this was decent to me.

Tap at bulldog downtown. Ruby with medium white off white head. Dark fruit smell. Dark fruit funk, decent yeast body. Sugary. Good balance. Classically great beer for number 700.

L14-795 Bottled. 25 srm. Blow-off bucket, fermx/co2/yeasty. Similar candy aroma as Westmalle Dubbel, just not as intense. Esters more of lighter color fruit, pears/apricots. Prominent taste of sugar. Mild body, smooth, ’pleasant astringency’ indeed.

aroma: banana, raisins, bubblegum, alcohol, appearance: coppery red, hazy, head forms quickly, white foam, is relatively lasting. taste: Similar to aroma. First you sense banana, raisins, possibly bubblegum, some malt, alcohol. Smooth banana and alcoholic aftertaste. Couldn’t sense hops. Too bubblegumy and banana flavor for my taste. Some diacetyl, light sweetness. palate:medium body, slick feel, lively, long slightly sweet finish. overall: Banana and bubblegum flavors and aroma is too strong for my taste. Did not enjoy it.

Purchased 1 bottle to compare to a recently finished homebrew that used Wyeast 1214 (belgian abbey). The homebrew had strong banana/clove esters despite fermenting around 63F / 17C. The Chimay red was much different than I remember from 15 years ago. I’d almost compare it to newcastle brown, with caramel and raisin flavors. Below that I got some basement/musty and hint of dried cherry flavor. My bottle gushed slightly when opened. Color was medium amber with slight hazyness. Very smooth drinking, no hint of excess alcohol flavor.
