Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I wasn’t incredible impressed with this beer the first time or two I had it. This last time, however was a little different. I had a bottle that I had been aging for about three years. I took it to a beer release with a buddy of mine. Wow, what a difference three years made. It was incredibly smooth and had some real depth of flavor. I think I will pick up a couple more of these to age. I love the Chimay Blue fresh...but after tasting this aged...might have to try aging the Blue also.

Review based on the BJCP2008 guidelines (style 18B). Bottle 33 cl - Batch L13-651. AROMA: complex aroma with malty caramely background and fruity aromas reminiscent of pinneaple and apricot. hop aromas absent. APPEARANCE: semi-dark copper with material in suspension. medium ivoey head with average retention. TASTE: flavour less rich than the aroma with mild sweet caramel notes. low apricot notes. low bitterness with a medium-dry finish. PALATE: medium body with medium carbonation. OVERALL: a dubbel with very nice aromas but, alas, not so complex flavours.

Draught @ Poteaupré. Dark brown colour, big head. Aroma of caramel with some toffee. Sweet flavour and yeast. Very fizzy

Opaque dark red, strong white head. Bread and roasted malt on the nose. Slightly overcarbonated. Bittersweet, but rather bland and watery. Bitter roasty finish. A pint is what this should be sold in. Okay.

750 ml bottle from the LCBO. Vertical tasting of 2012 and 2014 vintages side by side. 2014: Pours cloudy dark brown with lots of off white head. Herbal/peppery, citrus and floral hops hit the nose as well as the brown sugar/bread malt. The taste follows the nose with a pleasant astringency flavour kick that balances well with the malt. 2012: Slightly lighter in colour, with less carbonation and head. More fruit esters., yeasty malty than the fresh bottle. Astringency and bitterness is all gone. More wine-like, with notes of apple juice, dark fruit, sweet bread. Smoother than the fresh bottle, missing the hoppy/bitter notes. Conclusion: Much prefer the fresh bottle and I’m basing my raring on that.

Bottle bought in Calais. Iconic trappist beer, one of best dubbels. Full of aroma and taste. Thousands of revieweres are not wrong at all.

Chestnut color, beige head. Dried fruit nose, candi sugar, Belgian yeast, ginger, nuts. Caramel taste, roasted malt, yeast, dry finish, hint of alcohol. Medium body, soft carbonation, warming alcohol.

Bottle 33cl. Deep brown with a cream coloured head that fades quickly, especially if you accidentally pour the residu. The aroma is mainly sweet, but there’s more that I can’t clearly recognize. The taste is sweet too at first, but after that a sharp bitterness kicks in accompanied by herbs.
