COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Pas mauvaise mais la moins intéressante des chimay pour moi. Corps assez puissant, très caramelisé. Fin plutôt forte dans une amertume très passagère. La levure est très présente avec le sucre ce dont je ne raffole pas...

Aroma is sweet, malty, Belgian esters, toast, caramel, averagely complexed and averagely intensive. Apperance: dark amber color, nice foam - quite high, creamy, medium stiff. Taste: Belgian esters (dried peach and quince), sweet, little bit of balanced good quality alcohol, caramel, very low bitterness, overrated a little bit. Palate: medium body, medium carbonation, finish is a little bit bitter and also semi-sweet.

6.5 year old bottle. Found during rotbox dive prior to big move. Pours a reddish copper brown hue. So little head an english shiremane would be proud. Aroma offers sweet figgy berry sherry. Twangy raisin and ripened plums. Bit of grape drank cough syrup. Attenuated enough to be reasonably drinkable. A bit oxidized. Lowish carbonation, but enough fizz for the style. Not a favorite style of mine, and from an old bottle stored in less than ideal conditions. Better than expected.

Avermelhada, espuma de boa formação e pouca retenção. Chocolate, frutas vermelhas, uva passa. Paladar transparece leve o álcool, chocolate. Corpo médio, baixa carbonatação. Aftertaste persistente, só achei que faltou um pouco de corpo, mas muito saborosa.

Robe brune à la transparence rubby et légèrement orangée (trouble). Mousse blanc cassée, grossièrement alvéolée (grosses bulles) et tombant rapidement sans coller au verre (étonnant pour une belge). Nez de cannelle, de poivre, douceur, fruits rouges, rondeur maltée, équilibre. En bouche, de l’équilibre, du malt doux et calme, des menues épices. Beaucoup (beaucoup trop ?) d’équilibre, de maîtrise mais avec au final peu de palette, peu de profondeur mais un corps sans faille, moyen-solide, constant, bon. Sans fausse note mais sans joyeuses fantaisies non plus.
