Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Pours dark brown with a nice frothy head. Aroma is the only place this beer falls down. Juat has a malty aroma? The taste however, makes up for the smell. I really, really, really like this beer. The taste is as smooth as velvet on the front and it finishes just as smooth on the end. Man those monks know how to brew some beer!

Tåkete brun med høyt beige skum som legger seg som en tynn hinne ettervert. Lukter lett karamell, mørke frukter og aprikos. Bitter med noe søt bakgrunn. Brent sukker og tørket frukt. Mye lullsyre.

This smells like as close to a caramelized eye-fillet as a beer could be, but with a hit of malt and oak come across. The palate is more caramels and toffees, and chewy; it's still crisp and delicate, but packing some punch. This is a great Belgian.

Rot - braun mit einer ordentlichen weißen Schaumkrone. In der Nase säuerlich, Beeren. Geschmack: leicht süß, etwas Säure, etwas metallisch. Malz, zu stark geröstete Nüsse. Nicht schlecht, aber irgendwie unrund.

750 ml bottle intl signature chalice, bottled on 8/31/2013. Cork popped itself off when I uncaged it. Pours lightly hazy/cloudy reddish copper color with a 1 finger dense light khaki head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a large amount of streaming carbonation retaining the head. Aromas of raisin, plum, fig, pear, apple, pepper, caramel, brown sugar, toasted bread, light chocolate, light nuttiness, herbal, grass, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast and dark/bready malt notes; with good strength. Taste of big raisin, plum, fig, pear, apple, pepper, caramel, brown sugar, toasted bread, light nuttiness, light chocolate, herbal, grass, and yeast earthiness. Moderate amount of yeast spiciness on the finish; with lingering notes of raisin, plum, fig, pear, apple, pepper, caramel, brown sugar, toasted bread, light chocolate/nuttiness, herbal, and yeast earthiness on the finish for a good bit. Incredible complexity and robustness of fruity/spicy yeast and dark/bready malt; with a great malt/yeast balance and zero cloying flavors after the finish. Medium-high carbonation and medium body; with a very smooth and moderately creamy/bready mouthfeel that is great. Alcohol is very well hidden with only a slight warming lingering after the finish. Overall this is an incredible dubbel style! All around awesome complexity, robustness, and balance of fruity/spicy yeast and dark/bready malt flavors; and very smooth and crisp to drink. A highly enjoyable offering.

Bottle 330ml. Pours amber brown with a dense cream colored head. Aroma of malt and yeast. Medium bodied with gentle carbonation and some tanginess. Tastes quite sweet with good balancing bitterness and very light sour notes. Flavors is lightly hoppy, with sugary caramel and malt flavors, light citrus, plenty of yeast, slightly bready, and some bitter herbal notes. Some alcohol is present as the beer gets warmer. Quite sweet but not sticky and well balanced. Let the beer lose some of it’s chill before pouring.
