Chimay is an old classic that I've been drinking for 15+ years. It is still just as good as the first time! Bold but smooth. Great head and malty good. Chimay is the perfect belgian ale.

The very first thing I notice was the colour, I have never in my life seen such a beautiful beer, the russet brown liquid seemed to glow from within with it own luminesance and it is capped with the most wonderful head of foam. The aromatics were a wonderful restrained mixture of black currents, malts and spicy yeast. It is a medium bodied beer with nice carbonation, but what makes this beer stand out for me was the flavour balance, you can really tell that the monks have had centuries to perfect this beer. The flavours are exactly what the aroma suggest with malts and dark dried fruits making sweet love on the tongue at the start and moving to a beautiful climax of well balanced bitterness and spicy yeast.

Dark reddish amber with a good sized ight beige head that retains well.
Nose is caramel, candied sugars, light spice, bread dough, fruit loaf, light metallic ring.
Taste comprises dark fruits, brown sugars, fruit loaf, cake mix, dates.
Medium bodied, light spritzy carbs affording easy drinkability, sweet closure.

Poured from 330mL bottle. Cloudy, copper brown with some sediment and an off off-white head. Dark red fruit, dates, yeast and some caramel. Sweet malt and yeast flavour, but only a light-medium body. Not nearly as complex as I would have hoped.

33 cl bottle. Pours cloudy copper with lots of off white head that lingers. Aroma of caramel, raisins and clove, floral. Taste is cherry and apricot fruit, caramel, raisin. Finish has a touch of spice.

Bottle: cloudy copper to brown. Light head. Massive malty nose. Very dense. Loads of grain. Dried fruit. Fig, raisin and date. Dry. Low to moderate bitterness. Almost sour feel due to acidity but clean. Medium weight and length. Caramel, cream, malt, dry fruit, dry citrus rind. Moderate bitterness and hop on the finish.
Very solid. Not great.

Bronse/kopperfarget med medium høyt skum. Gjær og tørket frukt i aromaen, samt noe vag sødme. Smaken er aprikos, tørket frukt og gjær. God i munnen, mye kullsyre. Frisk, men med en god bitterhet i ettersmaken. Ettersmaken sitter ikke lenge, men sitter ganske godt.

This beer has a frothy head. It's caramel in colour and taste with well balanced bittering hops . It tastes like what I'd expect from a Belgium Bruin. A very good commercial beer.

Very fruity aroma with field berries, apricot, with sugar cane sub notes. Strength is medium with a slight fading out at the end.
Appearance: Dark copper, hazy, with a good sparkling. Head is showing thick, rocky and long lasting. Head is not sticking very much on glass and lacing is fading rapidly.
Taste: Entering mouth with notes of caramel and rapidly developing a subtle lactic yeast profile. Finish is slightly hoppy. Licorice notes are mixing with caramel to give a candy impression. Mouth feel is sparkling, pleasant, his texture is semi oily. Flavor balance is good between malt / hop and yeast.
On ne peut se retenir de la comparer à la Chimay Bleue. Elle manque de saveurs explosives et de raffinement par rapport à sa grande sœur. Elle demeure néanmoins excellente.

Semi hazy coppery body, offwhite head. Aroma has some darl bready malt, fruits, fruity yeast and some spiciness. Flavour is sweet and yeasty spicy. Nice one.
