COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

It's hard to review this beer while drinking it, as my eyes sort of roll back in my head in ecstasy. Of the Chimay beers I've tried, this is hands-down my favorite although they are all good. The malt sweetness seems to be better balanced in this one than the others.

Copper turbid pour with small off-copper head. Nose of sweet stone fruit, yeast. Taste is sweet with mild tart edge, yeast, vague warm spice, mildly bitter hop finish.

Murky brown colour, average head, dense, no lacing. Aroma is caramel, yeast, dark fruit hints. Taste is dominantly sweet with a caramel malt base, sugar, dark/dried fruit notes. Maybe a slight hint of earthiness. A bit too much on the sweet side for my liking. Medium body, soft mouthfeel, slightly prickly on the tongue. Lacks character

330ml bottle @ Estaminet de la Longue Croix, Herdeghem, Belgium. Paired with a speculoos mousse desert and cassonade sugar. Pours deep, hazy copper with off-white head. Aroma is fruity, some spice. This was undoubtedly served too cold so much of the flavours were unfortunately lost on me. However, the spicy fruity yeast and caramel notes did go well with the ginger in the speculoos desert. Will have to re-rate this.

It’s good but not amaaazing like so many of the big Belgian names--esp after it warms, the aromatic hop notes are quite strong for the style and some metallic rusty malt elements help to distinguish it from its better cousins

Served in a tulip glass from a 330ml bottle. Hazy ruby colour with diminishing off-white head. Aroma is caramel, bread, yeast, dark fruits and malts. Taste follows the nose very closely: malts, bread, caramel and dark fruits notes, bitter-sweet with a hint of sourness, slightly bitter finish. Medium body with lively carbonation. Not bad but not the best.

Cloudy brown body with a foamy head. Aroma of malts, grains, bread and some caramel and fruits in the background. Taste of caramel, wine, dried fruits and yeast. Medium body with a thick texture, noticable alcohol and soft carbonation.

0,33l bottle. Hazy dark copper/brown colour with shrinking big foamy off-white head. Aroma: Candy sugar, banana, fruits, notes of yeast. Well made. Taste: Sweet malty start with honey, than light bitterness, almost nothing. A bit sour but pleasent and well balanced. Creamy texture, warm feeling. Lively carbonation (surprisingly), medium body. Sweet, slighlty bitter finish. One of the best dubbels.

On tap @Buskers Pub (Rome). Pours deep coppet with a big and persistent off-white head. Aroma is malty, caramel, toffee, yeasts, esters, fruits. Flavour is unbalanced, very sweet and one-dimensionale, light bitter notes in the end. Medium body, medium carbonation. I expected more...

Tasted a lot like a wheat beer...bananas, caramel etc, but not very sweet at all, unlike a lot of belgian brown beers.
