COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

It's hard to review this beer while drinking it, as my eyes sort of roll back in my head in ecstasy. Of the Chimay beers I've tried, this is hands-down my favorite although they are all good. The malt sweetness seems to be better balanced in this one than the others.

Chimay never disappoints and it's been years since I've had one. The red/amber color is gorgeous with a white head the lingers in a swirl in a tulip .... The aroma is caramel and floral with a bit of yeast and fruit. The caramel comes through the sip with a hint of cherry before being taken with a bitter finish that's light and not overbearing. When you actually get to try a hyped beer and it lives up to it, that is a nice feeling. A limited example of the Chimay line was available here during my fledgling foray into beerdom and I didn’t appreciate the beast that Chimay Blue was. So I was quite joyous to try this one, dark copper red with a nice, thick fizz of off white resting on top. A curious whiff grants the sniffer with toffee, raisin, plum, vanilla, biscuits and leather. Like drinking a dark fruitcake that strikes a captivating balance. A mouthfeel both fizzy and oily, chewy but thin, this is a beer to be sipped and to ruminate about.

This was the first ever Trappist beer I have ever tried. The beer had a lot of smoke and poured a ruby color that was hazy and had a medium white head. The head is very creamy. The aroma is dark fruits, sweetness, slight bitterness, a great aroma. The taste is dark fruits, slight bitterness up front, some alcohol burn but mild, white bread, and a creamy texture. This beer has a strong flavor and a minor underlying sweetness to it.

Chimay Red, 33cl bottle as part of the tasting set I got for Christmas and so served in the matching Chimay glass. It pours a deep opaque brown and was a slow gusher on opening then had a creamy looking off-white head of foam that lingers a long time and coats the glass as it subsides. The nose is classic belgium ale, fruity, bready, plums, a bit of booze but the overall impression is truly of liquid bread. The beer has a surprisingly raspy effervescent and lively carbonation dancing on your palate while digging in it’s sharp heels. The flavor is chewy bready malts, sweet stone fruits, some wine like booziness plus a bit of nuttiness and some spice. A complex yet delicately balanced brew, there’s a reason these guys have been around for ages.

I tried it at a local beer fest. It reminded me of a Hefe Wiezen in color, body and taste. It was OK but considering the price I prefer a less expensive German beer that has a similar if not better taste. I’d drink it again but its a little too expensive to drink often. I think its actually somewhat over rated.

In Brussels for business I tried two beers a night. Little to add to what others have said, this was a knockout and likely better by not having been shipped transatlantic. Not quite the lingering maltiness of the Chimay blu, which I prefer, but a proud, world class brew.
