COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I really enjoy this beer. Pours a hazy reddish color. Has very different complex flavors , has hints of yeast and apricot. Overall very good dubbel

750 ml. big 'ole brown corked & caged Belgian bottle. Bottling date of 1/02/03. January 2, 2003 was a good day for bottling Chimay, because mine is wonderful. Poured out a hazy, rusty orange color. The cork shot out of the bottle first. Very effervescent, highly carbonated. Huge head at first, mocha cream in color. Slowly slid back to a thick matting, and even more lacing down my Chimay chalice. Huge island of yeast floated in the middle of the beer. Aromas are of caramel malts, lactic wheat tang, fresh cut hay, slight earthy & slightly musty aromas as well. I could go on describing this beer all day, because it is so complex, and so well made. Only 1 point off for cloudiness. Other than that, it was perfect. Tastes the same as it smells. Slight lactic wheat tang, enormous malty backbone supports the hops very well. Noble hops make an all too brief appearance towards the end. Bready, yeasty bite, and smooth mouthfeel make for a great beer. I wish I lived down the road from this Abbey.

wonderful beer that is, for the most part, easily accessible. has a nice texture and a good balance of flavor, leaving you with a very satisfying taste in your mouth. enjoy this one and compare for yourself!

One of my very favorite beers. Beautiful red color, not much of a head. Complex aroma reminiscent of dark fruits, somewhat peppery. Flavor is the same, malty, tremendous estery character provided by the Chimay yeasts. Hop flavor barely evident, the malts and candi sugar dominate.

aa wonderful creamy white head taste is fruity wtih a hint of apricot flavor. all in all this a well balanced ale.

La Chimay, une trappiste connue mondialement. Ce qui n’est pas évident pour les trappistes, puisque certains brassins sont vraiment à diffusion limitée. La Chimay rouge est la première de la série, et la moins forte, tout au moins parmi celles du commerce, puique Chimay a aussi sa bière « confidentielle » sous la forme d’une bière diffusée à l’auberge de Poteaupré près de l’abbaye, et qui titre seulement à 4,8 abv. Bref, la Première porte son nom, mais pas pour tout le monde !!! (Double jeu de mots, maître Capello). Cette Rouge (c’est son autre nom) est néanmoins un emblème de la trappe en Belgique, parce que chacun a son avis tranché sur cette double, qui a ses fervents partisans et ses amateurs éclairés. Mon exemplaire d’aujourd’hui est à date limite en fin 2011, ce qui est mieux que les bières plus jeunes. Pour les double, n’hésitons pas à favoriser l’âge. D’ailleurs j’ai dégusté hier une qui était pour fin 2013 et il est évident que celle d’aujourd’hui est meilleure. La couleur est un brun châtaigne un peu particulier mais qui a son charme. La mousse est beige, pas très stable, mais elle accroche bien les parois. L’odeur est celle d’un bon vrai brassin, avec des prunes et fruits mûrs. Le 1er goût est de prune, poire bien mûre, et céréales torréfiées (sans doute les extraits de malt, puisque l’essentiel est un orge de Champagne). Seul petit bémol, cette première gorgée tombe un peu « raide » en finale de bouche, je soupçonne fort le houblon Galena d’en être responsable, puisque c’est un bitter. Le 2ème goût est de pruneau, girofle et noisettes grillées. Le 3ème passe à l’équilibre entre céréales, houblon et surtout la levure qui pointe ici le bout de son nez. C’est une jolie levure, bien lisse à la bouche. L’alcool est bien dosé et progressif, sans envahir le sujet. La finale est soyeuse, bien agréable, avec un panel de senteurs et saveurs, qui vous font parcourir les sous-bois, les campagnes, et les champs, sans fausse note. Voilà donc une double qui tient sa place fièrement.

It's hard to review this beer while drinking it, as my eyes sort of roll back in my head in ecstasy. Of the Chimay beers I've tried, this is hands-down my favorite although they are all good. The malt sweetness seems to be better balanced in this one than the others.

Beautiful reddish-caramel color with a smooth fruity aroma. Warms all the way down with alcohol reminder in your mouth. It’s never overwhelming with just the right amount flavor and bitterness. Spicey sweetness builds the more you drink with none of the cidery notes that the white label carries. This is truly the ’Champagne of Beers’. Those monks out did themselves!
