Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Poured from 330ml bottle into snifter glass. Cloudy brown-red colour, large off-white head that falls away relatively quickly and leaves little to no lacing. A big aroma of sweetly sharp malts, caramel, multiple fruits like orange and spices. Taste dominated by malt, caramel and dark fruits, as well as a toasty edge. Mouthfeel is a little rough and in some parts watery, which detracts from the drinkability. Medium body with medium-to-high carbonation. Overall a mostly enjoyable beer, but far from a "wow!" beer. Seems a somewhat straight forward abbey dubbel.

Large bottle served in a chalice. (From Nov. 2011 notes) My favorite Belgian, as of a few years ago, but never rated and not sampled for some years. Pours a hazy reddish-brown with a grand, creamy tan head that reduces to a durable top coat. Full lacing washes down the side of the glass with every sip. The head, at least, deserves a 5. Plenty of fruity yeast in the nose, with some sweet malt, a hint of tartness, and light notes of cloves and dark fruits. T: a tart and fruity dubbel, featuring fig and apricot notes, with a fine balance of sweet, sour and light bitter. Some mild alcohol esters complement rather than detract from the flavor. Hard to criticize, but perhaps a tad more yeasty and earthy than ideal in the finish -- or this can be part of its charm. Improved with some warming. M - rather lively carbonation, but perfect for the medium-full body. Slight dryness in the finish.

Aroma: malt, caramel, fruit. No hints of hop aroma. Hints of yeast. Hints of citrus and alcohol aromas. Appearance: deep amber to brown color, hazy. Great thick slightly creamy beige head, with above average retention. Taste: medium sweetness, light-to-medium bitter, light sour. Palate: medium body, average carbonation, Overall: very nice appearance with great color and head. Great fruity aroma and nice maltiness-sweetness-caramel flavour balanced with an interesting citric touch. Long medium bitterness finish. Good interesting beer.

Cor âmbar escuro com tonalidade caramelo e um pouco turva; espuma bege, cremosa, de altas formação e persistência com excelente lacing. Aroma de frutas secas e nozes, delicado aroma floral, de pão e álcool. Sabor de frutas secas e nozes com final picante, amadeirado e de leve amargor; retrogosto amadeirado, adstringente, alcoólico e picante. Corpo médio e carbonatação média. Cerveja muito equilibrada e de excelente drinkability apesar do teor alcoólico.

Mahogany color with off-white head. Nice spicy aroma with some estery fruitiness. The taste is awesome with spice, banana and a hint of caramel, very little alcohol. Medium mouthfeel, slightly sweet. Great one.

Bottiglia. Il gusto al naso appartiene a luppolo e fruttato. L’intensità olfattiva è elevata e la persistenza olfattiva è ragguardevole. Il cappello di schiuma a bollicine medie si fa ricordare per il pizzo finale. L’aspetto del liquido è opalescente. Il colore è ambrato carico. Il corpo è strutturato ma duttile. L’amaro è medio. L’intensità gustativa è elevata e la persistenza gustativa è buona. Il gusto è piacevole. Le sensazioni boccali finali sono di birra beverina. Il finale è lungo, secco e pulito. In bocca l’aroma riporta sentori di resina, fiori, pane, frutta, frutta secca e agrumi.

Hazy brown pour with a thick and fluffy off-white head. Aroma is sweet, slightly alcoholic. Flavor is smooth. It’s sweet with some nice caramel and malts. Alcohol is masked. It has a traditional taste. Some fermented fruit at the finish.

Bottle @ Friends/chef. Appearance: pours slightly cloudy copper-brown with good tan soapy head and lacing. aroma/taste: caramel, bread, brown sugar, light dried fruit and spices. palette: medium yeasty aroma, average to sparkling carbonation, medium body, medium sweetness, balanced by a medium bitterness, average duration and an oily texture. overall: Nice fruity notes, but not quite the malt profile i was expecting in a dubbel

Pours ruby with delicious creme brulee aroma. Unfortunately the flavour is quite a bit more bitter than i like, and more bitter than the blue and white chimays. Only hints of the estery trappist goodness. Short finish
