COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I can’t write anything about Chimay that the previous 2000 reviewers haven’t already said. Great beer, but IMO, it’s worth the extra couple of bucks to buy the blue or white instead of the red. With that said, the red is still world class.

Bottle looks really simple but really good. Beer in the glass light brown, small head. Spicy-roasty aroma. Starts mild, almost a bit washy. Gets more and more moldy-malty. Finish a bit more warming, but still milder than exspected. I exspected more and I am a bit disappointed.

Bottle from some club in Chicago. Pours hazy dark brown with small tan head. Aromas of raisins, dark caramel, brown sugar, and yeast. Flavors of belgain yeast, caramel, dark fruits, and dark bready malts. Nice body and carbonation.

(bottle 6/26/10). Cloudy brown/copper color. Medium off white head. Moderate fruity raisin aroma, with light spicy belgian yeast character. Flavor of the same. Avg duration. Light dry, light alcohol finish. Thin/fizzy texture. Moderate carbonation. Spare lacing.

Serving glass: Poured from bottle into Snifter. Appearance: Pours a cloudy brownish-orange with a head that almost instantly disappears. Looks a little dead. Aroma: Plum, raisins, molasses and soy sauce. Taste: Plum and figs, dark musty fruit, light molasses. Some light clove and hops toward the end. Palate: Moderately high carbonation, a little fizzy (despite the dead look), medium body with a strange finish. Overall: Decent Dubbel that, in my opinion, does not live up to its Trappist reputation. Still pretty tasty though.

Aroma: Malts, Belgian yeast and sweet
Taste: Malty, dark fruit, spices and bitter finish

Pours hazy brown with a medium head. Light aroma is malts and dark fruits. Flavor is sweet malts, fruits and some alcohol. Stingy carbonation. Great.
