COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

11.2oz bottle in a Trappist glass. Pours opaque brown with a lingering, thick beige head. Aroma of spicy yeast, brown sugar, caramel malts, and light hops. Flavor mainly from the yeast and malts, but there is a hoppiness at the end. Silky texture. A pretty good beer.

Light wheat-bock aroma. Bit fruity, sweet. Light hops presence. Dark caramel-red cloudy with off-white foamy lacing head. Med body & med-heavy carb. Nice belgian taste. Sweet & malty up front with wheat-yeast fruity finish. Light hops & bitter after. Very enjoyable.

Bottle 0,33ltr: For i began to rate, i got three bottles with three different expiring dates . The first, expiring date 2005 hazy brown coloured, with an burning mouthfeel. Taste of an very mellow smooth faint whiskey and there is an good vanilla smell and taste also. The second, expiring date 2008 this have not that whiskey-like appearance, but is more nuttier of taste, and hints of caramel. But its slight weaker of character. The third. expiring date 2014, the one thats counts for this rating. This have more body and have an more foamy head. More taste of spices, and hints of caramel.

33cl bottle from the Doerak, Delft. Amber colour, decent head. I much prefer the Chimay Blue. It’s more complex

UPDATED: JUN 14, 2011 Aroma: Sour, a very slight soapyness, trace of alcohol, some yeastyness, a little bit bitter. Bland. Appearance: Bottle into a wine glass. A dark bronze sorta color with a huge off-white head that took a while to diminish...looks really cool. When I opened this one, it had sat for a day and it STILL exploded when I opened it. Talk about entering with a bang. Very little carbonation and some floaties. Taste: Arrgh. Watery, very slight sweetness at first, more water and then bitterness afterward. Not bad, but honestly kinda lame in the sense that I was expecting MORE COMPLEXITY, considering this is a trappist ale. It’s not bad...just boring. Palate: Watery, not much carbonation and leaves much to be desired. Overall: $3.90 and the Blue is right beside it and 10 cents more. F me sideways, I might as well buy the blue. I think the high and similar price to the blue had me expecting too much in a way. RE-RATE 2/6/2011: Aroma: Sour, candi sugar, trace of alcohol, some yeastyness, a little bit bitter. Has the character of the blue a bit. Appearance: Bottle into a Chimay glass. A dark bronze sorta color with a huge off-white head that took a while to diminish...looks really cool. This one exploded too. Bang. Beer in the sink, with an angry human watching said beer go away. Tsk tsk, into the Chimay glass on the double. Taste: Honey and flowers, some hoppyness afterward, kinda boozy. There’s a strong taste I can’t ID, but all Chimay’s have it, so I’m gonna call it the "taste of Chimay". Probably the malts and Chimay yeast. Palate: Somewhat thin, strong carbonation, though smooth and pleasant. Champangney I’ll call it, or maybe "Chimayney". How I wish there was italics here. And post formatting. Overall: I had to re-rate this, and as I suspected, I got a bad bottle before, thanks BCLC! ....fuckers. I thought I was in for another round of torture, but this bottle was actually decent. Decent enough for me to bring it to 3.6 from 2.7.

Red label, red beer, big white foamy head. A really nice dubbel, but without the sweetness a lot of them have. Slightly watery, but a great brown bread finish. Got this at the local Albert Heyn supermarket. Too bad the aroma isn’t great, otherwise it would be a lot higher

Love this beer! The balance of malty sweet and dark fruit is perfect. So smooth in the mouth, one of the greats.
