COMMERCIAL DESCRIPTION
Bottle Conditioned - 75 cl, and 33 cl bottles.
Ingredients: Pilsner malt (French barley from Champagne); wheat starch or flour (10% - 15%); dextrose (5%); malt extract (0.1%); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer.
Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Pours a cloudy medium-brown with a foamy off-white head. Aroma is raisin, cherry, apricot, and mildly yeasty. Taste is not as sweet as expected, given the frutiness of the aroma; it’s actually somewhat bitter and alcoholy. Palate is creamy and rich, with a bitter finish. Not my fave double.

33cl bottle. Poured a brown beer with frothy, tan and quickly diminishing head. Aroma is toasty, alcoholic and yeasty. Flavour has dry fruits notes, sweet, candi sugar with a moderate alcoholic and yeasty final. Carbonation is medium. Texture is oily. Body is high.

Aroma is delicious! Fruity apricot aroma with the creamy density of the head similar to champaign bubbles. Very smooth and fruity taste with just a slight bitterness and alcohol kick.

UPDATED: DEC 14, 2011 pours nice dark mahogany with a tanned head. aroma of dark fruits, caramel and brown sugar. taste is rich and sweet. there are dark fruits, cloves, and floral spice. there is a nice silky texture, with just the right amount of carbonation. quite a strange mineral quality in the finish, and its not as deep/complex as some, but its still really good.

UPDATED: JAN 31, 2012 0,33l bottle from Belgium. Hazy light brown color with frothy beige head. Interesting cheese, barley, fruits and alcohol aroma. It’s a bit smoky. Medium bitter-sweet taste. Medium body with creamy texture and average carbonation. Bitter-sweet fruity finish. It’s a wonderful beer. Unique aroma and taste. Very good choise.
